Ostara Recipes 2015………..

IMG_0857Merry Meet everyone and Happy Sun day!  It’s been a busy day here today.  My hubby is working on projects around the house and I had the laundry and the grocery to do.  Also, yesterday we had our ugly beige hallway and guest room painted in beautiful shades of green and “Vast Sky” blue, respectively.  So I had to put pictures back up on the wall, put everything back in it’s place etc.  The boring beige in the whole house is GONE and my home is warm in color as I like it 🙂  The Sun has been shining and we were in the mid 50’s…a lovely day but a bit chilly when the winds blow.  Tomorrow however we can look forward to hitting 70*! How wonderful!

Spring has sprung here..I believe it truly has!  Our bird and squirrel feeders are active.  I’ve seen cardinals, finches, mourning doves, and even two gorgeous male blue jays!  The squirrels are having a feast as well lol. There are tulips coming up in some areas, snow is all gone, and of course the days are getting longer.  I don’t see trees budding quite yet.  Now I live in Ohio, and I KNOW that we can see snow yet in April lol…but I think we can put Winter to bed pretty much 🙂  How about where you live?

I was perusing a few Spring issues magazines today.  I just love them don’t you?  There are always flowers and green and pastels on the covers.  So light and airy.  While I was looking thru them I found a few recipes I thought would be perfect for Ostara and thought I’d share them with you. They would be great to put in jars and take to the park for a picnic on a Spring day, great for your family gathering, and well, just for something light and healthy for every day!

 

Strawberry-Orange-Salad-with-Syrup-1024x678

 

Fresh Fruit Salad with Lime Syrup

1/2 cup sugar

2 Tbs lime zest

1/4 cup fresh lime juice

1/4 cup water

3 cups fresh orange segments

2 cups fresh strawberries, sliced

1/4 cup fresh mint leaves, chopped

1/4 cup sliced almonds, toasted

In a small saucepan, combine sugar, and next 3 ingredients.  Bring to a boil over medium high heat, stirring occasionally until sugar dissolves.  Remove from heat, strain through sieve into a small bowl.  Let cool completely.

In a large serving bowl, combine fruits and mint.  Add lime syrup, stirring to combine.  Cover and chill for at least an hour. Sprinkle with almonds before serving.

Spring Pasta Salad with Dill Vinaigrette

8 oz package orecchiette pasta

1/4 pound asparagus, trimmed, cut into into 1 inch pieces and blanched

1/2 cup diced carrot

1/2 cup diced yellow bell peppers

1/2 cup Dill Vinaigrette *see below

Garnish:  Fresh dill

 

Cook pasta according to package directions.  In a large bowl, stir together asparagus, carrot and peppers and pasta.  Add Dill vinaigrette stirring gently to coat.  Cover and refrigerate for at least an hour.  Garnish with chopped dill.

 

Dill Vinaigrette

1/4 cup vegetable oil

1/4 cup extra-virgin olive oil

3 Tbs white wine vinegar

1/2 tsp sugar

1/4 tsp kosher salt

1/4 tsp ground black pepper

1/4 tsp Dijon mustard

In a small bowl, whisk together all ingredients.  Cover and refrigerate for 2 hours or up to 3 days.

*I happen to think this recipe would be great with a greek or italian dressing too 🙂

Lemon Cupcakes with Lemon-Lime Glaze

*makes 12 cupcakes

1 1/4 cups all-purpose flour

1/2 tsp baking soda

1/4 tsp salt

1/2 cup unsalted butter, at room temperature

1 cup sugar

1 egg, room temperature

1 tsp vanilla extract

1/2 Tb lemon zest

Juice of 1 lemon

1/2 cup buttermilk, divided, room temperature

Lemon-Lime glaze *see below

Preheat oven to 350*  Line a 12-cup muffin tin with cupcake liners

In a small bowl, combine flour, baking soda and salt.  In the bowl of a stand mixer, beat together butter and sugar until light and fluffy, about 3-5 minutes.  Add egg, and mix until blended.  Add vanilla, lemon zest and lemon juice, and mix until well blended.

*be sure to read this closely before starting 🙂  Working in batches, add 1/3 of flour mixture. Beat until combined, scraping down sides of bowl.  Add 1/4 cup buttermilk; mix completely; scraping bowl.  Add second batch of 1/3 of flour mixture; scraping down sides of bowl.  Add remaining 1/4 cup buttermilk.  Finish with last of flour mixture, scraping down sides of bowl until all is fluffy!

Pour batter into baking cups, filling each about 2/3 full.  Bake for 18 minutes or until toothpick comes out clean.  Let cool completely.

Lemon-Lime Glaze

1 1/2 cups confectioner’s sugar

2 tsps fresh lemon juice

2 tsps fresh lime juice

In a small bowl, whisk together all ingredients.  Pour by spoonfuls over cupcakes.

Don’t they all sound wonderful….so fresh and reminding of Spring 🙂  Hope you give them a try! Remember to stir in some magick while cooking!

The Wheel Turns to Ostara 2015………..

imagesCAJTX5KXMerry Meet my friends.  It’s a cold and very snowy day here.  We’ve gotten about 4-5 inches of new snow! It was beautiful when we woke up this morning and just stopped in the last hour or two.  We have a roaring fire going, chili in the crockpot, racing is on though my hubby has fallen into his 2nd nap of the day (he has a cold) and I’ve been writing recipes up for the Sunday Stew and Imramma Magazine this morning in my jammies 🙂  Gotta love Winter Sun days like that!

Today is March 1 and in 19 days it will be Ostara..the first day of Spring.  It’s hard to see that right now with all this snow and cold, but I can feel it.  There is a change in the pattern of the Sun and Moon, in the winds blowing, in the birds and ground animals.  In the light of the morning, and the darkness of the sky at night.  Oh yes, my friends….Spring is not far away..not just by calendar date but if you pay attention to the signs around you too.

I grew up in a home that celebrated Easter.  We were casually christian I guess…went to church when I was little but after the age of 9-10 for me it was rare and only when my grandma asked us to go.  But the Easter egg hunts were a big deal in our family….the little boys in dress pants, sweaters and bow ties, the little girls in frilly dresses with bonnets and I even remember my dad buying us orchid corsages to wear.  I had 9 cousins and we would all go to my grandmother’s house, or an aunt’s house and have a great pot luck supper and a oh-so-much fun egg hunt.  Many times, my birthday fell on or very close to that day, and there would be an extra gift for me.  Big chocolate bunnies were always the best thing to find 🙂  Such fun for little kids. As I still have christian family members, we continued that practice with my girls and now with my grandchildren.  It’s a family day…not a christian holiday for me, but each family member sees it their own way.  And that is just fine!  Does your family still celebrate Easter?  Ostara?  It’s one of those great Sabbats that can be enjoyed by all without too much discomfort I think for those of differing Paths.

Ostara now, meaning March 20…that is a whole different thing.  It’s still about bunnies and eggs and food and pastel colors lol, but it’s also about knowing the Sun is getting stronger and warmer, the days are lengthening, and Spring will come.  We watch for signs of buds on our flowering trees, shoots coming up from the wet ground, blades of grass turning green, and birds becoming more active. We might see a bunny hopping in our yard, a chipmunk scurrying, a robin or yellow finch, and of course the garden centers are setting out mowers, grills, seeds, pots, early spring flowers etc etc. I love Facebook as the seasons change.  My friends love posting the first signs of the new Season.  When I see my southern friends posting pics of forsythia and cherry trees blooming, I know we aren’t far behind!  I can’t wait to smell that first scent of rich dirt, plant that first plant or seed, check out what’s coming up that was planted last year, and just plain get my hands and bare feet dirty again!

My Circle will gather a few days after Ostara as well.  Last year we blessed seeds and planted them for each of our gardens.  I’m sure we’ll do something like that again this year.  If it’s warm enough, we’ll go outside and give our thanks and gratitude to the Sun God as he brings warmth back to Mother Earth. A feast will be had and always a fire too.  I really look forward to time with my Sister Witches.  Ostara is usually when I plant my seed starters as well.  Blessing the seeds, placing potting soil in little sod pots, planting the seeds and watering with Moon water is such a wonderful way to observe the day.

For now, I still am enjoying Winter.  As a matter of fact, all of a sudden I look back on how fast it’s gone by.  Some of the things I vowed I would work on over the Winter escaped me.  But I spent a lot of time reading, writing, working on my home, cooking and baking, and enjoying the beauty of staying home more, spending time with family and resting more.  So things I didn’t get done..well, they will still get done eventually.   It does bother me I haven’t worked on my herbalist course the way I wanted to….found myself wanting to read instead.  But as Spring approaches, the mood is striking me more so I’ve picked it up today again and have worked on it some and will continue at my own pace until I finally do get that certificate!  I can picture myself on my sunny patio, with an iced drink and warm breezes and the scent of lavender and rosemary while I study and work 🙂  Yes..that sounds perfect!

I can see that many are searching here on my blog for Ostara recipes, rituals etc.  You can do that in the search box on the right hand side here on my blog.  You can also find more of my recipes starting March 22 in the Sunday Stew….again the icon on the right here on my blog.  I’ll be back here soon to post a new recipe or two, maybe a new seed blessing I’m working on and of course something Irish for Irish day!  I’ll also be posting more herbal info very soon.  I want to again thank my readers for being so supportive of me and my blog.   I truly appreciate it.

imagesCA48N7RIMerry Meet my friends and Blessed Imbolc Eve!  I have been very remiss about writing in my blog and I’m sorry for it. Before I go further though, this post is my 200th blog post and I have been blogging now for 5 years! I can’t believe it’s been that long! I want to thank you all so much, my readers and friends, for showing any interest in my writings. I very much appreciate you!

Since the holidays I have been busy enjoying Winter!  I have been reading like crazy which was one of my goals I set at New Years.  Even following a couple of book challenges and I’m enjoying it tremendously.  I’m one of those people who have a house full of books, including some shelves of books I have yet to read.  I love reading and Winter for me is the perfect time for it.  How about you? Are you reading more when forced to be indoors more?

Another thing I’ve been working on is making up an herbal chest for medicinal use.  If you’re a fan of Outlander ..books and series…by Diane Gabaldon, you might know what I’m talking about. I adore everything Outlander!   I made up a chest much like Claire’s “wee” box of medicinals.  I’ve added all the herbs that to me have a purpose of use for good health, healing, calming etc.  I’ve of course added essential oils, and things like gauze, bandages, scissors, tweezers, thermometer, and some modern day meds too.  Have a tummy ache, I have candied ginger, fennel seeds, or peppermint herb for tea. In pain, I have nettle tea or arnica salve.  Have a cut, I have my own healing salve. You get the idea 🙂  It was a lot of fun to do.

But while we are smack dab in the middle of Winter here in Ohio, tomorrow is Imbolc.  When day and night are equal and we recognize that the light extends each day and takes us to the first day of Spring in March.  We honor Brighid on Imbolc by keeping a fire on the hearth and inviting her into our homes with the use of a corn dolly, Brighid’s cross, or Bride’s bed.  I like to light candles all over the house, and at midnight swing open the doors and invite to come to my hearth bringing peace, protections, joy and abundance to my home for the year. Imbolc is also about doing our Spring cleaning both in our homes and in our own attitudes and situations. Throwing out those things that are no longer useful, old, raggedy, ugly, joyless…clearing our spaces of clutter leaves us open to new possibilities and bringing light into our dark places.

I have been working on my home for a couple weeks now. Attacking the cobwebs in the corners, cleaning out drawers and closets, making the hard decisions of do I really need this or want this in my home? Rugs and curtains and throw blankets and bed linens all getting washed and scented.  I have used herbal vinegar waters to mop and clean windows (not that you can tell after the rains lol) I organized my file cabinet, pitched papers no longer needed and filed what I do need in a better way.  Even my Witch cupboard got a good cleaning out today…pitching old herbs and incense (or burning them in our fire) cleansing crystals and my tools, salting and saging everything.  It was fun and it looks and smells great!  (picture isn’t great because our power was out for awhile today..but you can see how neat it is lol)

Gardeners are beside themselves knowing Winter is halfway over.  I know several witchy gardeners who have ordered their seeds, planned their garden beds and are dreaming of digging in the dirt again.  I myself ordered 18 packets of seeds today….a mix of herbs, veggies and flowers.  Can’t wait to get them.  Planning your gardens are a great way to spend these cold Winter days.

Tonight, it’s pouring rain.  We didn’t get the snow expected..like nothing! I’m so bummed lol.  But it’s a good night for quiet and contemplation, lit candles and fire.  Besides writing this blog, I’m journaling my thoughts for what I want to manifest in the Spring.  I have written down and will burn those things I want to release in my life.  Old angers, hurts, frustrations, poor habits are all good things to let go of.  I bet you have some of those things you can let go of too?  Try burning it..it’s so satisfying!!!

Imbolc has been one of my favorite Sabbats, as I’ve said before, because it was the first one I really celebrated.  That magickal feeling I got when I washed my floors and windows with herbal washes, lit white and red candles, cleansed my home and invited Goddess Brighid to join us in our home…well, I get that feeling still 16 years later. I want to wish all of you a very Blessed Imbolc.  May Brighid bring you all wonderful things for the coming year.  May the rest of the Winter be kind to you too…remember Spring will come!

The Spirit of Christmas revisited………..

christmas-candle-douglas-pulsipherMerry Meet friends!  I hope that  all of you here in  the USA and those who celebrate it;  had a blessed Thanksgiving day.  I had a very nice day!  It was celebrated at my house (as usual) but a very small group this year.  My sister and her hubby were in St. Thomas, so their grown kids, who live out of state, didn’t come in.  My daughter, son-in-law and grandkids take turns with both sides of the family for holidays..it wasn’t our year so they weren’t here.  So I had 8 family members and two lovely guests.  My mom and I split the menu….the traditional meal as we have made for years..and that everyone expects! 🙂  The food was great! Everyone was relaxed and happy and a good time was had.  After, I put my jammies on early, had some coffee with Baileys, sat by the fire and vegged out!  How about you? Was your Thanksgiving a good one?

Did you go out shopping on Black Friday?  I did that one time many years ago.  I vowed to never do it again and I haven’t! LOL.  It was a nightmare in so many ways.  As I watch the videos on tv of people fighting over an item, being trampled as stores throw open their doors, etc..it all just seems crazy to me. Don’t even get me started about stores opening up on Thanksgiving eve.  You can get good deals all through the holidays, online etc…I just don’t get the appeal.  If you braved it..kudos to you and hope you got great deals!  I got good deals too…I shopped in my jammies online and got most of my shopping done! Yay!!

The rest of this blog post is from a previous post back in 2010 that I decided to repost for new readers who may not have come across it.  I was watching “A Christmas Carol” again today,  remembered my writing this and thought you all would enjoy it.  Let me know what you think.

Now that Thanksgiving is past, our thoughts all turn to Yule/Christmas.  Other than Samhain, probably my favorite Sabbat!  Before I go on any further, let me explain that I celebrate the Winter Solstice AND Christmas.  Christmas to me is a secular holiday..all about family, feasting, good will, music, lights, trees, gifts of course, etc etc.  The story “A Christmas Carol” is all about Christmas Eve and Christmas Day..so that’s what I’ll be speaking about for now.

I love Winter! ( yes I know some people will be groaning right now!)  I love all it entails.  Sitting by the fire, nesting, going outside and feeling the cold air whip across my face and take my breath away, wearing cozy sweaters, knitted scarves, hats & mittens, hot chocolate, warm spiced wine, feeding the winter birds and having time to read, crochet, relax, bake, take on projects on the inside of the house, ..well I just love the slower pace.  Today I watched “A Christmas Carol”…my all time favorite book and movie…all versions..ever!  Today happened to be the musical version..which I happen to think is excellent.  Has Kelsey Grammar as Scrooge and many other great stars.  My favorite version..for the record..is probably George C. Scott…he was a most excellent Scrooge! Though sometimes I think it must be Patrick Stewart! 🙂

I am sure many of you will recognize this quote.  I am a huge lover of Charles Dickens and I think he writes beautifully and from the heart and his words are still ringing true all these years later.  He was indeed teaching a lesson in this Novella.  What is the lesson?  I would imagine most people would say the same thing…”goodwill towards men”.   I see it as more than that.  My understanding is that Dickens was appalled at the poverty he saw around him, and that the middle and upper class were doing nothing to help them at all.  His Scrooge talks about the work houses and the programs set up by the government to aid the impoverished…but it was nowhere near enough.  He wrote this book to open the eyes of those who were not “seeing” what needed to be done.  For people to open their hearts and their wallets to help the less fortunate and it would make them happier and more blessed in their own life.

As a pagan witch, I believe that God/Goddess, the Universe, the Creator, whatever you believe in…  put us here to learn lessons..with the ultimate goal being LOVE.  Our goal in life should be to discover that..LOVE.  And to love means to care for our “fellow man”.  To me, “Goodwill towards Men” means just that.  We should love our family and friends as I’m sure we do.  But we should also love those we don’t know, help those who need it, love and care for Mother Earth and the creatures who inhabit Her…  No judgement, no greed, no setting standards for others in our own minds, equality for all, acceptance of all religions, courtesy, kindness….Love.  To me, Dickens hit the nail on the head so to speak…he saw a vision of how the world should be.  More of us could learn from Scrooge’s Christmas Eve night.

Scrooge was not an evil man..he was afraid.  His father did time in debtors prison..causing him to have to slave in a work house at 11 years old.  He never wanted to do that again..but he lost track of his self, his soul..so focused was he on never being poor.  Until he learned what dying a lonely old man would truly be like..did he become a truly rich man.  Hoarding his money, working long hours, never enjoying the money he had;  even for himself.  He didn’t have a relationship with anyone except his business partner, Marley.  He lived a very “poor” life in every way…because of his fear.

There are many positive wonderful characters in this book.  Old Fizziwig, who gave a huge party,  sparing no expense,  to show his gratitude to his employees.  There is the clerk, Bob Cratchit, so lowly in Scrooge’s eyes, but greatly loved by his large poverty stricken family, especially Tiny Tim.  Then there is Fred,  Scrooge’s endearing nephew.  He was the epitome of a good man who’s life was abundant in family, friends, love , joy, and blessings.  He showed love at every turn.  All he wanted from Uncle Scrooge was for him to come to Christmas Day dinner.  He came every year and requested it every year.  He never gave up on him.  and when Scrooge had his life altered…he welcomed him with open arms..holding no grudge for all the years of rejection.  Though he was not a rich man…he was rich in every other way.

I don’t know about you..but I want to be like Fred….I want to be rich in friends.  I want to be rich in experiences.  I want to be rich in appreciation for the blessings that come to my life.  This is the lesson that Scrooge learned..luckily while he could still have some time to truly appreciate it. Look into your own Past, Present, and even into your Future.  Have you done well by others?  Can you do better? ” A Christmas Carol” will always mean a lot to me…and I will try to keep Christmas in my heart all year long.  and as Tiny Tim says……God(Goddess) Bless Us Every One!!

Every year in recent years, my family has adjusted how we celebrate the holidays.  Yule is for me about introspection, welcoming the Light,  and having quiet time to myself.  Christmas is as I said above…family, food, fun, giving, and Santa!  Having said that, we have simplified so much and it has made the holidays so much more enjoyable.  There are less gifts and more time spent together.  Whether baking cookies, watching a movie together with popcorn and a fire, hot chocolate and driving around to see light displays, breakfasts or lunches together, a little shopping, romantic candle lit dinners….just making memories together.  That after all is what your family will remember.  Looking back over your childhood, do you remember what was under the tree, or do you remember decorating it?  Do you remember what gift who gave who or do you remember grandma and grandpa coming over to visit?  While we all may remember that favorite gift we got, most of what we remember are the not things..but people and how they affected your life growing up.  I keep this in mind every day with my girls and now my grandkids.  Just remember, things don’t have to be perfect, you don’t have to spend a lot of money…you just have to make memories!!! It’s the simple things in Life that matter!

The Wheel Turns to Samhain 2014……….

imagesCA0GN85BMerry Meet my friends.  I have been so busy I’m very late coming to my blog to write about my favorite Sabbat!  It should come as no surprise to anyone that it’s my favorite.  I’m a Witch after all!  Samhain is the Witch’s New Year, the night the veil between the worlds is the thinnest, the night we can commune with our ancestors who have passed on, and of course, it’s the night many Witches love to put on all of their witchiest clothes, jewelry and of course our pointy hat! For me, this year, it’s also Beggar’s Night. Little ones will be coming to my door looking for candy (my grandkids will be doing that here too!)  The leaves are falling, the nights are cold and crisp, the wind blows, pumpkins are lit, adults and kids alike shiver with both a little bit of excitement and a little bit of something magickal!

For Samhain night, my family will gather here  for dinner, a fire and of course to pass out candy and for the grandkids to go trick or treating in my neighborhood.  After the little goblins have gone home with their parents, I will do my own quiet ritual. Divination to hopefully have my ancestors come thru to me will be done.  Also, an offering to Mother Earth as she slowly quiets and goes to rest for the Winter.  I also always express my gratitude to God and Goddess for the abundant Summer and beautiful Autumn season of growth and harvest both in my garden beds but within me as well.  As the Wheel turns, I too change and grow…no matter how old I am…I still do.

On Saturday night, my Circle will gather in full Witch regalia for fire, feast, and ritual.  Dressing the part is such fun for Samhain, as of course, we don’t walk around in black dresses, striped socks and pointy hats on a regular basis 🙂  We will honor our loved ones who have passed on, including our beloved pets. We also will have quiet discussion together on what the past year has brought for each of us, and what we look forward to in the next year.  On Sunday evening, my hubby and daughter and I will have a Dumb Supper or Ancestor Supper. This will be a quiet and introspective evening for me especially.  I always look forward to the fun and busyness of this Sabbat…but it’s the quiet times that have depth of meaning.  The quiet can bring messages from our ancestors, from Goddess and from our own conscience.  Always find time to be quiet and still and to listen.

One of my most popular blogs here over the years, has been my Samhain Recipes.  I’d like to go ahead and give you a few this year too.  If you have been following Samhain’s Sirens this year (button on the right side here) you will have already seen these recipes…but I will share them again here for those who haven’t.

Autumn’s Spiced Apple Cider

*The perfect Samhain drink….add rum or vodka if you wish 🙂

 

1 gallon apple cider

15 whole cloves

10 whole allspice

1 TB candied ginger

12 cinnamon sticks

1 cup packed brown sugar

Combine all ingredients except sugar and bring to a boil in a large pot on the stove.  Lower heat, add sugar and simmer 15-20 minutes.  Strain and serve or place in a thermos for your picnic or drive.  You can keep it warm on the stove or crockpot all day long.  Store the leftovers in the fridge.

*If you like, place orange slices in the pot too..adds a sweet bit of tang!!

Apple-Brie Crostini

These little toasted Crostini are a wonderful appetizer to serve for any Samhain gathering!   They are sweet and wonderful.   Great for an after dinner treat too!

 

1 loaf French bread, thinly sliced

1/4 cup butter, melted

1/2 cup brown sugar, packed

1/2 cup chopped walnuts

13.2 oz pkg Brie cheese, thinkly sliced

3 Granny Smith apples, cored and sliced

Arrange bread on an ungreased baking sheet; bake at 350* until lightly toasted. Set aside.

Mix together butter, sugar and walnuts.  Top each slice of bread with a cheese slice, an apple slice and a teaspoonful of butter mixture.

Return to baking sheet; bake briefly until cheese melts.  *Makes 24-30

**Variations….a sugared pecan with a drizzle of honey to top it…or a nice dollop of apple butter!

 

Farmer’s Market Autumn Stew

*A great way to finish up your Summer harvest or that last visit to the Farmers Market veggies!

 1/2 lb stew beef, cut into small cubes

2   1/2″ thick boneless pork chops, cubed

1 TB olive oil

2 carrots, peeled and chopped

2 parsnips, peeled and chopped

2 potatoes, peeled and chopped

1 stalk celery, chopped

2 apples, cored, peeled and cut into small cubes

2 TB quick-cooking tapioca, uncooked

1 cup apple cider

1 cup water

2 tsps beef bouillon granules

1/4 tsp pepper

1/4 tsp dried thyme

1/4 tsp dried rosemary

Salt to taste

Brown beef and pork in oil in a large skillet over medium heat; drain.  Place vegetables and apples in a slow cooker; sprinkle with tapioca. Add beef and pork.

Combine remaining ingredients in a small bowl; pour over beef and pork. Cover and cook on low setting for 8-10 hours or on high for 4-5 hours. Add salt to taste before serving.

*Makes 6 servings

Chocolate Chip Pumpkin Cake

 

1 15 oz can of pumpkin

4 eggs, beaten

1 cup vegetable oil

2 cups sugar

3 cups all-purpose flour

2 tsps baking powder

2 tsps baking soda

2 tsps ground cinnamon

12 oz bag of semi-sweet chocolate chips

 

Preheat oven to 350* In a large bowl, mix together pumpkin, eggs, oil and sugar.  Mix in flour, baking powder, baking soda and cinnamon.  Stir in half the chocolate chips.  Pour batter into a greased and floured Bundt pan.  Sprinkle remaining chips over batter.

Bake at 350* for one hour, or until golden brown and inserted toothpick tests clean. Cool then remove from pan.  Top with fresh whipped cream to serve if you wish.

*Makes 12-16 servings.

I have gotten my Samhain altar done finally today. I particularly love Samhain altars.  This one literally gives me goosebumps.  Most of the time my altars are outdoors…simple and only a few necessities, but for Samhain, I love to go all out!  As you can see 🙂

I’m working on writing up the rituals for my Circle gathering, and have a few cards to do yet.  But I am also very relaxed, using the fire in the fireplace to help me meditate, and again…..finding quiet time.  I hope you’re doing the same.  What loved one do you hope to hear from? What will you decide to let go in the old year and bring forth in the New Year?  Think on these things my friends.  Witch or not!

Merry Meet my friends!  Autumn has arrived here in Ohio!  Even though Mabon isn’t until the 23rd, Autumn is here none the less. I for one, couldn’t be more Happy about it! My favorite time of year!!  Already I feel like a heavy load has been lifted.  The heat and humidity of Summer makes me feel heavy, weighed down, and tired.  I am energized as the cool days and even cooler nights are upon us.  We have had our first (and second and third) fires in the fireplace!  There is nothing more cozy to me than a fire on an Autumn evening.

My oven has been busy with baking. My crockpot is on the counter permanently, garden beds are cleaned up of flowers that are spent and I’m about to harvest a huge amount of herbs..most of them for the last time this year.  Summer couch covers are washed and put away, warm blankets have been brought out, the chimney and furnace have been inspected and cleaned, a cord of wood has been ordered, and Winter clothes are in the closets and Summer clothes put away for next year.  Autumn cleaning is near finished.

We are seeing some color in the leaves already as I showed you on my last posting.  Some trees have lost their leaves completely, but there is LOTS of color still to come.  Bees still abound in my gardens. Birds, squirrels, chipmunks, and other ground animals are gathering frantically.  This morning I had a huge amount of activity at my bird and squirrel feeders.  I had a couple dozen mourning doves, a pair of cardinals, 3, yes 3! male blue jays, a Flicker woodpecker and multiple finches, sparrows and other small birds.  Our white squirrel Luna, other gray squirrels and several chipmunks were also scurrying and gathering! It was wonderful to watch.  I still have my hummingbird feeder up for migrating hummers, but we haven’t seen one for a few days now. If you don’t already, please think about feeding these animals and birds…to help them through the long hard Winter we are being promised again this year.  You will get so much pleasure out of it!

My Mabon altar is set up and plans are made for my Circle/Tribe to meet on Sunday evening here.  There will be an outdoor fire, weather permitting, desserts, spiced cider and good company!  Several of us are also attending our local Pagan festival on Saturday which we are looking forward to.  For several of us, it’s our first time to go!  I am usually on vacation this time of year so haven’t been able to attend.  I can’t wait!

 

Yesterday, I was flipping through a Taste of the South magazine and came across a recipe that sounded so yummy I thought I’d share it here with you.  It sounds soooo spicy and good for Fall!  The picture is theirs as well.

Orange-Cardamom Bread

3 cups all-purpose flour

1 1⁄2 teaspoons salt

1 1⁄2 teaspoons baking powder

2 1⁄2 cups sugar

1 1⁄2 cups whole milk

1 cup vegetable oil

3 large eggs

2 tablespoons orange zest

1 1⁄2 teaspoons vanilla extract

1⁄4 teaspoon ground cardamom

Orange Glaze (recipe follows)

Preheat oven to 350°. Spray 2 (8×4-inch) loaf pans with nonstick baking spray with flour. Set aside.
In a medium bowl, sift together flour, salt, and baking powder. Set aside.
In another medium bowl, beat sugar, milk, oil, eggs, zest, vanilla, and cardamom at medium speed with an electric mixer until well combined. Gradually add flour mixture, beating until smooth.
Divide batter evenly between prepared pans.
Bake 30 minutes. Loosely cover with aluminum foil, and bake until a wooden pick inserted in center comes out clean, approximately 30 minutes more.
Let cool in pans 10 minutes. Remove from pans, and let cool completely on a wire rack.
Drizzle with Orange Glaze.

 

Orange Glaze
2 cups confectioners’ sugar
1 teaspoon orange zest
1⁄3 cup fresh orange juice
In a medium bowl, stir together confectioners’ sugar and orange zest and juice until smooth.
I will be making this recipe this week.  It sounds yummy!  I think my Circle ladies will like it! 🙂  I hope you try it too!
I am most anxious for the next couple months of Autumn weather and the first snows of Winter.  There is just something about this time of year to me.  I call it nesting…coming indoors.  Warmth of fire, smell of woodsmoke and candles, something simmering on the stove or baking in the oven, warm beverages, perhaps crochet or a book on my lap (and a cat or two of course) are all just so cozy to me.  I turn more inward, I am a bit less busy, more time for introspection, journaling, writing, reading etc.  Having said that, this is also my favorite time of year to go for a walk, to spend time walking on crisp, bright colored leaves in my warm jacket and gloves, seeing Mother Earth in all her glory….well it’s just a NEED!  I know many of you have the same need!  To grab every minute we can of the beauty that is our Mother.

The Wheel Turns to Mabon 2014…………

applesMerry Meet my friends.  Can you believe it? September has arrived! I am so glad!!  We are going through a really hot and humid spell here as I know many of you are as well.  Summers last hurrah I think.  We are very quickly going into my favorite half of the year. I feel a quickness in my step, my energy level is shifting and my mind has turned to cleaning, cleansing and decorating the house, cleaning up the flower beds, harvesting the last of my herbs and veggies, and getting ready to celebrate Mabon.  The 2nd harvest festival!

 

“Mist blankets the morning garden and the empty fields; a last rose blooms slowly over the arbor by the backyard gate.  Paintbox leaves fall to the ground under galoshes and the wheels of slicker-yellow school buses.  Sweaters come out of cedar chests, soup pots simmer, and wild geese make their mercurial journey southward across the pale autumn sky.”

  Mabon which is on September 23rd this year, marks the Autumn Equinox, the balance of night and day and the first day of Autumn.  It is a time for thanksgiving, and rest.  Our ancestors at this point were busy filling the larders with preserved fruits and vegetables, smoked meats, aged cheeses, flour, wheat, cider and wine etc.  The thanksgiving was for the bounty the Summer crops had given them (hopefully) and the “rest” was much deserved.  Great feasts were held with an abundant table of food and drink, dancing and enjoying the last warm days of the year.

 For us, it’s also a time to be thankful for our own little garden’s bounty, for what the farmers have grown and harvested for our grocery shelves or farmer’s market, and to know that all the hard work in our gardens is about done for the year.  Putting the garden beds to “bed” for the Winter, depending on where you live, may still be yet to come.

Mabon also means the Goddess is passing from Mother to Crone and the God is preparing for death and re-birth. The trees are starting to change into their Fall tapestry of colors, the nights are colder and longer, the Sun casts long shadows, woodfires are lit, blankets are aired out and thrown on beds and sofas, the oven has something made with apples and cinnamon baking, and the stove top has spiced cider and hot soup simmering.  Sweaters, picking apples, carving pumpkins, hot drinks, warm bread with preserved jams, critters gathering and nesting, birds flocking and filling their bellies, hay rides, corn mazes, nature walks, the Harvest Moon…everything you can think of that is most wonderful about Autumn is upon us!

My celebration of Mabon is always a thanksgiving ritual, a feast with family and friends, an outdoor fire if weather permits, an offering for Mother Earth and the Fae for all their hard work, and reflection on my year that is ending at Samhain. It’s also about letting go and renewing, re-assessing, and thinking about how I’d like to spend the more quiet months to come in Winter.  And baking..did I say baking?  What is it about this time of year that makes me want to bake?  Breads, pies, cakes, cookies…..things made with spices, apples, pumpkin…..it doesn’t matter, I just want to bake! 🙂  How about you?  My Circle will gather as well for our celebration too. I’m thinking a soup and bread feast sounds wonderful!

The Wheel Turns to Lughnasadh/Lammas 2014……

Merry Meet my friends!  How are you all this fine day?  How has your Summer been so far? My Summer has been wonderful really.  We have had numerous days that stayed in the 70’s giving us a reprieve from the normal HOT and Humid days of July. We’ve had a good amount of rain, so lawns are still green and growing like crazy.  I’ve done two harvest on my herbs already and they are growing strong still…heading to a 3rd harvest.  Our garden beds and veggies have loved the rain and the cooler nights too so our flowers are still budding and blooming.  The SuperMoon was pretty amazing too…such energy!!

Now…can you believe it…we are just 11 days from Lughnasadh/Lammas! The first Harvest festival!  Have you noticed that the wheel is turning to Fall?   The nights are getting longer again, the Sunlight has changed, the critters are gathering, even some of my bushes/plants leaves are changing colors already.  Corn is high is the fields, sunflowers are blooming, and yes, Halloween and Fall stuff are coming out in the craft shops 🙂  While we have a bit of Summer left…the subtle changes are there.

“The summer air is hot and still, the afternoon hazy; crickets call relentlessly from among the brown grasses, and ears of corn are the same heavy, burnished gold as the late-day sun. Hawks circle in the blue-white sky overhead, and seedpods ripen where flowers bloomed just a month before.

 But shadows begin to lengthen along the garden wall, and the nights come, just a bit cooler, perhaps; a settling begins in the Earth, a gathering, a slow, quiet turning toward the coming darkness.”

For Lughnasadh, I love to do a few things.  Harvest my herbs (which I’ve just done), make herbed oils and vinegars, and bake bread!!  Making breads from good grains to celebrate the harvest is a favorite thing to do for me.  And the scents that come from that put me in mind of Autumn immediately!  It won’t be long before apples and pumpkins will be everywhere and that just makes me want to bake too!

Magickally, I do a simple outdoor ritual to honor the first harvest, keeping in mind that our ancestors were VERY busy at this time of year to ensure that they had ample food for the Fall and long Winter that was to come.  Planting, tending, harvesting, and storing food took a great effort in order for them to eat when they could not just go to a grocery store like we do.  I love to do some canning this time of year too….this year I’m thinking apple butter, strawberry jam and I might try my hand at pickles 🙂  Seeing pretty jars of colorful goodness in my pantry just makes me happy..and reminds me how Blessed we are in our time.  Kitchen Witchin too makes this Witch very happy!

Having said that, I know that some people aren’t as well off as others. There are people who don’t have enough food.  Keeping this in mind, donating to food pantries or your own neighbors who may need a little help, is a kind thing to do.  Share your harvest if you can.  I often pass tomatoes and fresh homemade bread over the fence to my neighbor, Jane.  No, she’s not hungry…but she lives alone and she is always thrilled to get something I pass over to her.  It makes me happy to do it too.

I thought I’d share a recipe with you for a muffin that is wonderful this time of year. I made them the other day, when we were cool and I was thinking about Fall all day 🙂  Filled with apples and cinnamon and crunchy topping..they are a huge hit at my house!

 

Autumn’s Apple Crunch Muffins

1 1/2 cups sifted flour

1/2 cup sugar

2 tsp baking powder

1/2 tsp salt

1/2 tsp ground cinnamon

1/4 cup soft butter

1 egg, slightly beaten

1/2 cup milk

1 cup Granny Smith apples, peeled and diced (or your favorite apple )

 

Topping

1/4 cup packed brown sugar

1/4 cup chopped walnuts

1/2 tsp ground cinnamon

*Blend these ingredients in a small bowl.

 

Sift flour, sugar, baking powder, salt and cinnamon in a mixing bowl.  Cut in butter until fine crumbs form.  Set aside.  Combine milk and egg and add to dry mixture.  Blend well.  Stir in apples; blend well.

Spoon batter into muffin cups, filling about two-thirds full.  Sprinkle with brown sugar topping mix.

Bake at 375* for 25 mins or until golden brown. Remove from oven and let cool.

*makes 12

**ok…it says it makes 12…I only got 8 nice big muffins.  If you want more….I suggest you double the recipe.  Then take some to your neighbor 🙂

Summertime!……………….

10357532_740761952633883_8781510162816551980_nMerry Meet my friends!  It’s a gorgeous Saturn day here in Ohio! We’ve had a few beautiful days of cooler weather….50’s at night and 70’s during the day.  This whole Summer has been fairly mild.  Sure, we’ve had a few days that hit 90* or near it, but we’ve had good breezes and enough rain and though Summer isn’t my favorite Season, I’ve enjoyed it.

I hope that you all had a wonderful Litha/Summer Solstice.  I know I did.  I was busy that day as we were leaving for the Smoky Mountains the next day, but I harvested my first harvest of herbs, worked in the gardens a bit, and had a simple Summer feast.  I made offerings to the Fae, and welcomed the Sun on the longest day of the year! It was a beautiful Sabbat.

The next morning, my hubby, daughter Sara and our friend Shawna, left for the Smoky Mountains.  My daughter Kate, her hubby and my 3 grandbabies left at the same time as we were all vacationing together.  I booked a couple of wonderful cabins at our favorite resort area.  The weather was HOT, the traffic was terrible, and it rained every day….but it was a wonderful trip!! LOL.  Anytime I can be with my family, in the mountains that call to my Soul…..I’m a happy Witch!.  Ah the mountains.  They call to me and I never tire of seeing them, of being in them, and seeing how Mother changes the mountains with Her Seasons.   We even had the pleasure of seeing a momma bear and her very small cub learning to climb a tree 🙂  We ate well, spent some time by the pool and relaxed in our cabins while it was raining when it did.  We made some memories for the kids 🙂

Now, Summer!  Everything here is still green and lush.  Gardens are blooming at full bloom, birds sing and critters scamper, the 4th of July was celebrated yesterday. Fireflies, butterflies, and bees are busy.  I have so many fond memories of Summer when I was a kid.  The adage….lazy, hazy, crazy days of Summer..was true then.  I spent a lot of time playing with my friends in the neighborhood.  Kickball games, tether ball, riding our bikes or roller skating, going on hikes in the woods near our homes, fishing at Old River (not allowed but we did it anyway).  We only went home to eat or use the bathroom.  In the evening, the parents would come out to their porches, talk together and keep an eye on us….and we got a holler when it was time to come home…or we came home at dusk like good children. There were day trips to visit parks, fairs, drive-in movies, picnics etc.  Summer was truly a wonderful, memorable time.

Every Summer I spent a week with my grandma and grandpa who had 10 acres of apple trees, gardens, hammocks and endless fun.  I loved helping my grandmother snap beans and shell peas. I helped her bring in good things from her gardens, washed them, canned them, sliced them…whatever help I could be. I give my grandmother full credit for my love of gardening and cooking.  I learned at her side.   There was time spent on hammocks with library books that she made sure I had an abundance of… by taking me to the library herself.  There were 7 course meals..even for breakfast..mostly things from her garden. Early to bed and early to rise at her house.  I still can conjure up in my mind, the amazing scents coming from her kitchen early in the morning, windows open to let in any breeze that came, mourning doves cooing and my sense of contentment when I was there at her home. I eagerly jumped out of bed to be with her…usually standing in her kitchen in housedress and apron, stirring something amazing on the stove 🙂  It was pure magick!

 

I did my best to make those amazing kind of memories for my own daughters, and now I have the extreme pleasure of trying to do the same things for my own grandkids.  I want them to have those memories of the lazy days of Summer.  To know that Life can slow down in the Summer.  Kids these days seem to constantly need to be doing something…they enroll in every sport, go to camps, take lessons, need trips to malls and movies, play dates, etc etc.   There isn’t anything wrong with that..don’t get me wrong…but I think kids need to know how to entertain themselves, to slow down and be lazy, use their imagination…just BE!  Get your kids close to Mother Earth…let them dig in the dirt..gardening or making mud pies.  Lay blankets out on the ground and watch clouds drift by, or count stars at night under the Moon.  Take them to the library and encourage their reading over the Summer. Plan simple picnics, outdoor day trips and if you have a drive-in theater near you! Go!  Sprinklers, jars for fireflies or bugs, popsicles and s’mores, long walks in the woods, fishing….find things to do that don’t cost anything….teach them to find the simple pleasures of Summer. They’ll thank you for it later!

I hope that you all have an amazing July!  August 1 is Lughnassadh already!! The first Harvest Sabbat.  The Wheel is turning fast! The Wheel Turns to Litha..the Summer Solstice 2014..

IMG_0918Merry Meet my friends. I hope this night finds you and yours well! The Full Strawberry/Honey/Mead Moon (whichever YOU call Her) was absolutely incredibly beautiful and powerful. After all, with it being Friday the 13th and Mercury being in retrograde…She had to be! I spent extra time under Her influence…still am!.. as She’s still beautiful tonight. The energy is palpable if you sit quiet and soak Her in. Crystals and tools have been re-charged, Moon water made and rituals done. House was smudged too. 🙂

The Summer Solstice, Litha, MidSummer….it’s just a week away on the 21st! The longest day of the year..but also the start of the days shortening. That’s so amazing to think about..especially since Summer is just starting! But at my age LOL..the Wheel turns fast, so I’ll be enjoying every minute of those daylight hours, Hot Sun, warm breezes, green grass, blooming flowers and herbs, lightning bugs, summer rain showers, etc etc. All the perks of Summer. Even though the HEAT is not my favorite thing..I will enjoy it 🙂

This year, Litha will be a quiet, solitary celebration on the day. My Circle won’t meet til the following weekend. However, my family leaves for the Smoky Mountains the day after..the 22nd. To know I’ll be in my favorite Mountains for the Solstice is just…well…Magickal to me. I can’t wait!! When I travel, I carry a portable altar kit..mostly candles, incense, small crystals to bury, my pendulum, lavender oil, etc. Whatever strikes me I might want or need. Taking a walk into the Mountain woods, results in a bit of Magick for me! My soul just sings when I’m in those Mountains and the woods there.

The Solstice is when I always put out new Witch’s protection bottles on my property, set up and re-fresh my wards and barriers, and make offerings to the Fae…though I do that ALL the time while gardening, I am always sure to do it again. Also, my herbs are usually ready for their first harvesting. That is one of my favorite things to do! Smelling, touching, talking to, harvesting, tying and hanging my herbs just makes me so happy. AND I know most of them…will bloom again one or two more times before the end of the season. They are growing leaps and bounds in our wonderful weather. It’s not been too hot and we’ve had good amounts of rain, which is sooo much better then watering with a hose 🙂 It will be a good harvest!

Also, if you type in Litha and/or Summer Solstice..you will find previous years postings of recipes, correspondence and other info etc. I thought I’d share this recipe with you for now….it’s refreshing and uses healthy produce and herbs that are abundant this time of year!

Strawberry Balsamic Salad

1 (7 ounce) package Baby Spinach or 1 (7 ounce) package baby romaine lettuce
2 cups strawberries, sliced
1/2 cup goat cheese or 1/2 cup feta cheese, crumbled
1/4 cup pine nuts, toasted
Balsamic vinaigrette
1 tablespoon balsamic vinegar
3 tablespoons extra virgin olive oil
1 tablespoon fresh basil leaves, chopped
crushed salt and black pepper

Whisk vinegar and olive oil in small bowl. Add basil and season with salt and pepper.

Combine spinach or romaine and strawberries in large bowl.

Add vinaigrette; gently toss to evenly coat.

Divide salad among 4 plates. Sprinkle each salad with cheese and pine nuts

*Personally, I’d double the the oil and vinegar for the dressing..leaving the basil in the same amount give….if you like  a bit more dressing.  But I like it with JUST balsamic too 🙂
This would be lovely with some crusty bread and a glass of wine..a perfect Solstice feast!
However YOU celebrate the Solstice, I hope you have a beautiful, longest day of the year and enjoy every moment of it. Be lazy, be active, walk barefoot, swim, catch lightning bugs, eat watermelon, take a long walk in the cool woods…Connect and enjoy the Sun!
