Blessed Imbolc 2020

MimagesCA3UM5E2erry Meet, Happy February and Blessed Imbolc to all.  Well, here I am again, having been a few months since I wrote.  I’ve had a lot going on, as we all do, and unfortunately my blog gets put so far down my list I don’t get to it……until the real urge to write strikes me again.  I hope that 2020 is treating you all well and life is good for you and yours.

To tell you what’s been going on in my life would take a bit but some highlights are:

*I had knee surgery finally in later October for a torn meniscus. It was nearly 4 months from injury to surgery! I’m healed mostly from the tear and surgery, but arthritis remains to cause me some discomfort.

*I got a job!  LOL…I haven’t worked outside my home in 20 years, caring for my daughter Sara during that time.  My husband’s doctor, knowing that Sara had passed and I was a nurse etc, asked me if I’d be interested in working a few hours a week in his office.  While I love being home, I thought it was probably good for me so I took it.  I’ve been there 3 months, love the staff, (doc is okay lol) and I’ve learned I hadn’t lost my skills with being home.

*My Mother-in-law is increasingly wanting help from my husband especially, despite the fact she’s in better shape then most her age.  This has affected our lives greatly.  It’s a long story but lets just say she’s a very selfish, unkind woman and it’s been a difficult time for us.

*My sweet Roxie kitty went to the rainbow bridge in October as well.  Miss her so much.  She got sick, we thought just a stomach thing, but turned out to be she was ate up with cancer and her time with us was over. She was just the best kitty and we were all so sad at losing her at the young age of 9. 😦

*About a month after we lost Roxie, we were happily rescued by our new kitty, Ralphie.  Yes, he came about Thanksgiving time and we named him Ralphie after the Christmas movie “A Christmas Story”   It just suits him! He’s still a kitten, actually rescued from the streets by my dear friend.  As she has like 5 dogs, she asked me if I’d like to meet him and see about him coming to live with us.  It was love at first site and he’s delightful.  As a kitten,  he of course is full of the “zoomies” as my grandkids call it, but we are thrilled with him.  My feelings are every home needs a cat! ❤

Well that’s the rundown of the highlights for me.  The holidays were both busy and peaceful too, most days.  I enjoyed my time with family, my Yule gathering with my coven, and quiet time at home on dark evenings with a fire, a kitty, a book, lit candles etc.  We have had a very mild Winter! Hardly any snow and most days seem to be in the 40’s.  When we do get a few snow flurries, the ground is too warm for it to accumulate.  This to me is a bad thing!  I love Winter, cold, frosty air and lots of snow.  In Ohio though, we could get hit still in March and April. lol.

And now, it’s February already and the wheel has turned to Imbolc.  My altar is ready, my coven gathers tomorrow, and tonight I’ll light candles and do my rituals to Brighid, the coming of the Sun, and blessings to still enjoy the dark days ahead of us yet to come.  While I know Spring is coming, we still have many weeks of Winter and I for one am glad of it.

I’ve been working on my Imbolc (spring) cleaning for this whole month really.  Hubby and I are thinking hard about moving to a smaller place with less to tend to.  We want more time for relaxing, some travel, time with kids and grandkids etc and also for our RV camper at the lake we LOVE spending time at.  So purging is high on my list of things to do again.  Seems no matter how hard I try, I feel I have too much stuff.  A smaller home won’t hold it and I’m happy to have less stuff.  So I’m constantly revisiting areas of my home to part with things no longer needed, used or wanted.  It’s a good thing!

I’d like to share an Imbolc tea recipe I came across.  My coven spent time last Saturday making it, and a loose incense together.  Both are quite yummy!   The tea is quite simple. I recommend of course using organic herbs as who knows what you’ll get if you don’t!

Imbolc Tea

2 parts dried calendula

2 parts dried chamomile

1 part dried lavender

1 part dried rose hips

 Blend them together and store in an airtight container.  If you don’t like the stronger taste of lavender, use less.  I prefer a bit less myself.

I won’t be leaving any food recipes in this post today. I’ve done many fabulous ones in previous posts over the years. To find those, Just do a search in the box to the right for Imbolc and they’ll pop up for you.

For now, I wish you all a very blessed Imbolc, Candlemas, or whatever you celebrate on the Equinox weekend! Just remember that even in the darkest days of Winter, Spring will come, ready or not!!

The Wheel turns to Mabon 2019…..

Blessed MabonMerry Meet and good afternoon!  I hope this post finds you all well and enjoying a great weekend.  In my time zone, Mabon or the Autumn Equinox is during the night tonight at 3:50am.  It’s officially Autumn, and the time of equal balance of day and night.  My favorite time of year, as those of you who know me or have followed me any length of time, know! I’m normally squealing with glee, but here in Ohio we have had incredibly hot, dry days for way too long, with no real end in sight.  Upper 80’s and even 90’s are in the forecast clear up into October.  This is not normal and I for one feel really disgruntled by it.  I need Summer to be gone!

The dryness especially will effect our Autumn color.  The leaves are seriously just turning brown and crunchy and falling off the trees like crazy.  Garden beds look dismal or empty as people have given up on watering and just yanked everything out.  Including me.  My last herbal harvest will be pretty pitiful.  It’s just been too hard to keep them watered and growing.  People seem to be grumpy and dragging in energy etc….me too. It’s all very sad and disheartening.

However, despite all this, I’ve decided to pretend it’s Fall.  Candles are lit instead of fires.  I’ve Fall cleaned my house.  I’m decorating the house this week, and will go buy my mums, pumpkins and apples and just try to pretend it’s in the 60’s instead of the 80’s.  The flannel sheets will have to wait but otherwise this house is going to be all Autumnal, damn it!  LOL! I also am doing some baking, some crockpot cooking and of course, preparing to celebrate Mabon.  My sweaters are ready to be worn as well!

Some of my discouragement has been that I’ve injured my left knee pretty badly.  It’s been about 8 weeks now and despite resting, elevating, icing, x-rays and cortisone shots there’s no real improvement.  I can hobble around ok but too much of it puts me down for too long!  So now I’m off for an MRI this week…..some talk it may be a torn meniscus, or seriously torn tendons/ligiments that aren’t healing.  But, being laid up in this heat isn’t the worse thing.  I’ve read, crocheted, caught up on shows, organized, purged, worked on my BOS and also just seriously rested….all of that is a good thing.  See…..you can always find the positive in most situations 🙂

So Mabon is here and it’s pretty shocking in my older age how fast that wheel turns.  Though we’re hot and dry, I can still see all the signs of Fall.  Mostly in the cooler nights, and mornings.  The critters are gathering like crazy.  Birds gather and feed at feeders.  Kids are settled back in school and all the after school and weekend sports are in full swing.  The Sun and Moon and have moved their positions in the sky.  The winds have changed. There’s some color on some trees.  This brings me hope that soon temps will drop and I’ll have those lovely crisp, Fall days and cool, inky dark nights. I can’t wait!

My Mabon Altar 2019

My coven isn’t gathering for this Sabbat but we will meet up soon just to visit with each other.  Too many of us couldn’t make it or had other plans.  So my celebration will be solitary.  I’ll greet the Sun which will start slowly spending less time with me each day.  I’ll greet the lovely Moon Goddess who will spend MORE time with me.  I’ll make an apple dessert and plan on a good healthy meal.  Altar work will recognize that it’s the Witch’s Thanksgiving.  I’ll thank Goddess for the blessings in my life, and despite my complaining about life right now, I am very blessed and know it.  As I come up on the 2nd anniversary of my daughter Sara’s passing, I also send my love to her in my altar work as well. Goddess carries those messages to her often. How do you celebrate this lovely Sabbat?

So I promised you all a recipe.  This is a new recipe to me I tried and it’s yum.  Mabon and September just scream apples and this fits the bill! It’s super moist and the streusel topping is to die for!

Apple Pie Streusel Bread

½ cup butter, softened
1 cup sugar
¼ cup buttermilk
2 teaspoons baking powder
2 eggs
1 teaspoon vanilla
2 cups all-purpose flour
½ teaspoon salt
2 cups shredded, peeled apple (about 4 medium)
1 cup chopped walnuts or pecans
½ cup raisins
1 Recipe Streusel-Nut Topping

Preheat oven to 350 degrees F. Grease the bottom and 1/2 inch up the sides of an 9x5x3-inch loaf pan; set aside.

In a large bowl, beat butter with an electric mixer on medium to high speed for 30 seconds. Beat in sugar until combined. Add buttermilk and baking powder; beat until combined. Add eggs and vanilla; beat until combined. Add flour and salt; beat until combined. Stir in apple, nuts, and raisins.

Spoon batter into prepared pan; spread evenly. Sprinkle Streusel-Nut Topping over batter. Bake for 60 to 65 minutes or until a wooden toothpick inserted near the center comes out clean.

Cool in pan on a wire rack for 10 minutes. Remove from pan. Cool completely on wire rack. Wrap and store overnight before slicing.

*Um…I did not let it cool completely and did not wrap and store overnight before slicing lol.  It just was a bit soft and didn’t do a firm slice….but who cares!

Makes 1 loaf

Streusel-Nut Topping
¼ cup packed brown sugar
3 tablespoons all-purpose flour
2 tablespoons butter
⅓ cup chopped walnuts or pecan
In a small bowl, combine brown sugar and flour. Using a pastry blender, cut in butter until mixture resembles coarse crumbs. Stir in walnuts or pecans.

I wish for each of you a beautiful, magickal Mabon.  May Autumn be in your heart if it hasn’t yet arrived in temperatures.  Fall WILL come.. even if it’s only a few of those glorious, crisp, blue sky, colorful days.  Relish them when they arrive!  Blessings to you all!

Mabon Blessings 2017…and Recipes!

IMG_5679[559]Merry Meet friends and a very Blessed Mabon to you all!  I love that Autumn is finally here but….we are in the middle of a huge heatwave!  90* all week….ugh!  That is most definitely not normal for Ohio.  Oh, we’ve had some hot September days for sure, but a 10 day streak of 80’s and 90’s is not normal..and not fun…and not conducive to Fall activities lol.  Oh well, I’m still working on some Fall cleaning so I’m finding ways to celebrate the season anyway.  This too shall pass as they say 🙂

Hubby and I have started cleaning up our garden beds.  Cutting back spent flowers, harvesting the last of the tomatoes and herbs, and prepping soil where needed.  As I mentioned, I’m still working on organizing and purging drawers and closets.  I love getting rid of things no longer used. It just makes my house feel so much cleaner, allows air to move, and less clutter helps my mind as well.  I’ve decorated the house for the most part for Fall.  Still need mums and pumpkins but that will wait until weather cools down again.  And I LOVE going to the apple barn and the garden center for those things on a cool, blue sky day.  So I wait!

Today I started my day off with a walk in the grass around my yard, some time at my altar,  (which I’m sharing a picture of here)  lit candles and incense for healing and to honor the day, I plan on doing some baking later as well.  I like also to focus on balance in my Life on this day.  Mabon is the Autumn Equinox, when night and day are equal.  As I said in my last post, so many of us seem tilted, out of sorts, grumpy.  This has been me.  So tonight I will go under the Moon…the early crescent, and do a little ritual to help me find balance again in my life. I have found I’m starting to feel better simply by realizing I’m not feeling right and focusing on fixing it by meditating more, finding more quiet time, and practicing my Craft more!  It’s helped!

My altar, since this picture was taken, has apples sliced with honey and bread added, and a few items from nature…acorns, leaves, pods etc.  I always try to add bits of nature of from my walks to my altars.  Brings gifts from Mother Earth indoors 🙂

As promised, I’ve found a couple recipes to share with you.  One so simple and so good, the other…well it’s the best apple bread I’ve ever had and not overly hard to make either!

Apple Crostini

3 apples, peeled, cored and chopped  (try Honeycrisp, Fuji or Granny Smith)

3 Tbs unsalted butter

1/4 cup brown sugar

1/2 tsp cinnamon

French bread, sliced and toasted

Brie wedges

fresh chopped rosemary for garnish if you have it.

Preheat oven to 350*  Combine apples, butter, brown sugar and cinnamon in a pot over low heat.  Simmer for 20-30 minutes, until apples are soft and mash easily, but leave some apple chunks.  Remove from heat and allow to cool to room temp.

Place French bread slices on parchment paper-lined baking sheet. Top each piece of bread with a small wedge of Brie cheese. Bake for about 5 mins to soften cheese.  The spoon apple mixture over cheese and sprinkle with rosemary.

Refrigerate any leftovers.

Praline Apple Bread

1 1/2 cups chopped pecans, divided

8 oz sour cream

1 cup sugar

2 large eggs

1 Tb vanilla extract

2 cups all-purpose flour

1/2 tsp baking soda

2 tsp baking powder

1 1/2 tsp salt

1/2 cup butter

1/2 cup brown sugar

1 1/2 cups finely chopped, peeled apples

Preheat oven to 350*  Toast 1/2 cup pecans in a single layer in a shallow pan 6-8 minutes, stirring occastionally; set aside.

Beat sour cream and next 3 ingredients at low speed with an electric mixer for 2 mins.  Stir together flour and next 3 ingredients.  Add to sour cream mixture, beating just until blended.  Stir in apples and the toasted pecans.

Spoon batter into a greased and floured 9″x5″ loaf pan.  Sprinkle with remaining cup of pecans and press into batter.

Bake at 350* for 1 hour.  Cover with foil the last 10-15 minutes to keep from burning pecans.  Cool in pan on wire rack for 10 minutes.

While cooling, bring butter and brown sugar to a boil in a heavy saucepan, stirring constantly for 1 minute.  Pour over bread and let cool.

*also delicious to eat warm.

I hope that you all give these recipes a try.  Oh and the bread, make extra..it goes fast! Also great to treat a neighbor, friend or family member with a loaf.  You’ll get rave reviews!

I hope that however you celebrate today, you spend some time focusing on yourself.  Try to find balance in your Life, even if just for a day, but you should really try to make it a priority. It’s a crazy, busy world for most of us these days and we need to take care of ourselves.  Prepare yourself for the dark days of Fall and Winter that are coming..much as Persephone did as she journeyed to the Underworld.  Build yourself a cozy cocoon, find things to do for yourself…learn something new, read those books you’ve not had time for, start a new project, spend more time with loved ones, and definitely find more time to yourself! Pamper yourself with long bathes, good meals, walks in nature and time under Grandmother Moon!  You’ll feel soooo much better!  This is advice I need myself and intend on taking!

The Wheel Turns to Ostara 2016……..

IMG_0857Merry Meet my friends!  I have been terribly re-miss on writing here in my blog and I’ll tell you why shortly.  It’s a cloudy day, and warmish, hitting 60* right now.  Earlier the Sun was out and there was a gorgeous crescent Moon last night to enjoy and draw energy from 🙂  Rain is coming in later..which we DON’T need!  Our backyard is flooded!  But there are signs of Spring everywhere in our yard.  From the animal and bird activities, to the greening of the grass, and the shoots popping up out of the ground from lots of our flowers and herbs! I love it!

First of all, I want to say thank you so much for being a reader and a friend of this blog.  I just celebrated my 6th year writing here. I started out thinking it would be a way for me to keep a journal of sorts.  But it evolved into something more over time.  I have had over 207,000 views and nearly 780 followers.  It’s amazing to me that anything I have to say is of interest to people.  And yet, it seems some are interested and I really appreciate it 🙂  I keep it mostly because I enjoy writing, and I enjoy sharing, and I enjoy learning too.  So thank you very much!  I hope my readers continue to enjoy what I write.

Secondly, I have had a rough few weeks.  I had surgery on Feb 1 as I believe I talked about a bit in my previous posts.  That surgery was a nightmare.  It did not go well.  Something I won’t go into was done in a way that a nerve was damaged.  I was in extreme pain..I mean truly excruiciating with no relief except when I laid perfectly still.  Long story short, a week later I was in the OR again having that fixed.  The excruciating pain was relieved mostly, but the pain of two surgeries is just now starting to alleviate.  I’m told to expect another month or so to feel normal again.  I am glad that the original health issue is fixed…but it’s been a heck of a recovery.  Funny..I told myself while I was laid up, I’d be reading, writing, and working on a couple projects. But I found it was hard to focus on all of those things.  Thus, the lack of writing here in my blog.  But I’m reading and journaling and yes, now writing here too now.  Thank you for your patience!

There is much going on! Ostara is next Sunday!  I’m blessed that a dear Witch sister is coming to stay with me for a few days.  Deb has been a friend for years now but she lives in SC and we have only met face to face once..and that was way to brief of a time and quite some time ago.  We talk on the phone all the time and I look forward to having her within hugging range for a change. 🙂  My coven will gather for Ostara Sunday morning and she will be here for that as well. Everyone is looking forward to meeting their long- distance sister! We will do a ritual, have brunch and a fire. It will be magickal and filled with love!  Breakfast casserole, muffins and pastries, fruit salad, coffee and juices are on the menu.  Yum!

For Ostara, we often meet in the morning as I love greeting the Sun with a toast.  After all, Ostara is the return of Spring, the return of longer days, of warmth, and green and flowers and leafed out trees.  Mother Earth awakens! Now, I live in Ohio….and we’ve been pretty warm and Spring-like lately. But snow could come back anytime yet lol.  Yesterday, I took a stroll around the yard and discovered lots of my plants and herbs blooming green shoots!  It’s early for sure, but wonderful!  One thing I did do while laid up, was flip thru garden catalogs and magazines, and I have lots of plans to add to our flower beds. We’ll be adding new plants, thinning some, moving some etc.  We’ll be planting new trees, flowering bushes and new flowers to fill new beds.  I so can’t wait!  Right now, all I can do is look.  I’m not healed up enough yet to clean up the beds etc….but I got my hands dirty a bit yesterday and it made me smile.  There is nothing more grounding than digging in the dirt 🙂

My Spring cleaning was delayed due to the surgeries, but I had worked very hard on serious purging and organizing beforehand.  I’ve started back up again the last day or two.  I’m down to one cupboard, one closet and a couple kitchen cupboards to go thru yet.  It feels so great to do this.  Purging unwanted, unneeded, and unused items is very freeing 🙂  It won’t be long and my clothesline will be up again, and clothes, linens and so on will be flapping in the sun and wind! I love that!

I’m going to go ahead and post a couple of recipes for Ostara, since it’s here so fast!  I’m going to be very busy this next week getting ready for our gathering and for my dear company coming, so I’m not sure I’ll be back to write until after.  Foods for Ostara are: Leafy green vegetables,  sunflower and pine nuts, dairy,  fish, hot crossed buns, sweet breads, hard boiled eggs or eggs fixed any way,  honey cakes, and seasonal fruits.  Here’s a couple recipes that should fit right in there!

Rich and Moist Honey Cake

 

1 cup all-purpose flour
1 1⁄2 teaspoons baking powder
1⁄4 teaspoon salt
1⁄2 teaspoon ground cinnamon
1 teaspoon orange zest
3⁄4 cup butter
3⁄4 cup white sugar
3 eggs
1⁄4 cup milk
1 cup chopped walnuts

Honey Sauce
1 cup white sugar
1 cup honey
3⁄4 cup water
1 teaspoon lemon juice

Preheat oven to 350*  Grease and flour a 9 inch square pan. Combine the flour, baking powder, salt, cinnamon and orange zest. Set aside.

In a large bowl, cream together the butter and 3/4 cup sugar until light and fluffy. Beat in the eggs one at a time. Beat in the flour mixture alternately with the milk, mixing just until incorporated. Stir in the walnuts.
Pour batter into prepared pan. Bake in the preheated oven for 40 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool for 15 minutes.  Cut cake then Pour honey syrup over the cake.
For the Honey Syrup: In a saucepan, combine honey, 1 cup sugar and water. Bring to a simmer and cook 5 minutes. Stir in lemon juice, bring to a boil and cook for 2 minutes.

Bacon Spinach Quiche

4 eggs
2 cups milk
1-1/4 cups shredded cheddar cheese, divided
1/4 cup finely chopped onion
4 bacon strips, cooked and crumbled
1/2 teaspoon salt
1/2 teaspoon ground mustard
1/4 teaspoon paprika
1 package (10 ounces) frozen chopped spinach, cooked and drained
1 unbaked pastry shell (9 inches)

Preheat oven to 400*

In a large bowl, beat eggs; whisk in milk, 1 cup cheese, onion, bacon, salt, mustard and paprika. Add spinach.

Pour into pie shell.

Sprinkle with the remaining cheese. Bake at 400° for 40 minutes

Yield: 6 servings.

 

There you go…something sweet and something savory 🙂  Enjoy!

Where I’m sitting right now!

Merry Meet my friends…I’m sitting by the fire on this the longest night of the year, in my pj’s with a glass of mulled wine at hand.  My daughter and I are watching “A Christmas Story” and I suddenly remembered that I hadn’t written my post yet for Yule!  I’m so sorry, but better late than never 🙂  I really did want to share some recipes with you that will come in handy the next 10 days or so.

It’s pouring rain, gloomy and windy here and we are on another week of unseasonable temperatures! Record highs in the mid 60’s are expected!  I so wish it was snow and not rain!  I ran my last couple of errands to do today and I have about 10 packages to wrap and I’m officially all ready for the holidays….. except for a trip to the grocery early tomorrow morning. I’m hoping I can avoid some of the crowds doing that.  I’m looking forward to a more quiet Christmas as my family gatherings will be over the weekend rather than the eve or the day of.  So reading and relaxing is high on my agenda lol.  And yes, those who know me, know that I do gather with my family for Christmas.  It’s not a religious holiday for me at all, but it is for many of my family members that I love, so I celebrate with them, but in my own way.  As a family time together, celebrating with gifts and food and love and joy!

Tonight, I will do some altar work, use my hearth fire to burn that which I wish for, and those things I wish to let go, and I will make time to honor my favored Goddess Hekate.  Tomorrow morning, I’ll be up early, toasting the rising of the Sun (whether I can actually see  him/her or not) and make my offerings to Mother Earth.  The day will be spent partially with family, and then quiet and introspective tomorrow evening. The fire is burning merrily. The house is smudged and candles are lit. I have bayberry, frankincense, pine, orange, clove and cinnamon scents going with the help of incense, candles and a simmering potpourri.  Our feast, which we’ll have tomorrow night, will just be soup, salad and bread. Simple and good.

Foods for Yule are traditionally:  Nuts, apples, caraway cakes soaked with cider, pears, ginger tea, roasted turkey, fruitcake,  cookies, eggnog, mulled wine, and pork dishes.  But there are other foods as well associated with the season such as gingerbread, ham, cranberries, pomegranates, mince pies, and frankly, whatever else your family tradition is!  What are your foods that your family just MUST have on the table for your Yule/Christmas/New Year’s feast?  Well, I’ll share a couple of recipes here with you that my family loves, as I have in past postings.  I see through my blog stats that MANY of you are checking out all my previous posts for Yule/Solstice and I so appreciate that.  Thank you!  Hope you like these too!

Red and Green Pear Salad

1/3 cup walnut pieces
3 Tbs cider vinegar
1 Tbs honey
1 tsp Dijon mustard
1/4 tsp salt
1/8 tsp freshly ground pepper
2 Tbs extra-virgin olive oil
8 oz mixed baby greens
2 pears, such as Bartlett, cored and sliced
1/2 cup pomegranate seeds
1 oz  blue cheese, crumbled

Toast walnut pieces your favorite way. Pour onto a plate to cool and set aside.

In a large bowl, whisk together the vinegar, honey, mustard, salt and pepper. Add the olive oil in a thin stream, whisking constantly until the dressing is smooth.
Add the greens, pears, pomegranate seeds and walnuts to the bowl with the dressing and toss gently to coat. Divide the salad among 4 plates, garnish with the cheese and serve immediately. Serves 4.

Merry Yule Fruitcake Bars

*even if you hate fruitcake..try these!

3/4 cup butter, softened
1-3/4 cups packed brown sugar
3 eggs
1 tablespoon vanilla extract
1-1/2 cups all-purpose flour
3 cups coarsely chopped walnuts
1-1/2 cups coarsely chopped candied pineapple
1-3/4 cups red and green candied cherries, halved
2 cups pitted dates, halved

In a large bowl, cream the butter and brown sugar until light and fluffy. Add eggs, one at a time, beating well after each. Stir in vanilla. Add flour and walnuts; mix well. Spread evenly into a greased 15-in. x 10-in. x 1-in. baking pan. Sprinkle with pineapple, cherries and dates; press lightly into dough.
Bake at 325° for 45-50 minutes or until lightly browned. Cool on a wire rack. Cut into bars.

Yield: 8 dozen.

Solstice Mulled Wine

2 (750 ml) bottles of dry white wine
2 oranges, sliced into rounds
1/2 cup brandy (optional)
1/2 cup honey or sugar
16 whole cloves
4 cinnamon sticks
4 star anise
optional garnishes: citrus slices (orange, lemon and/or lime), extra cinnamon sticks, extra star anise

Combine all ingredients in a non-aluminum saucepan, and bring to a simmer (not a boil..it will boil the alcohol right out of it!) over medium-high heat. Reduce heat to medium-low, and let the wine simmer for at least 15 minutes or up to 3 hours. Strain, and serve warm with your desired garnishes.

Yum!  Sounds warm and cozy doesn’t it?!

Remember that tonight and tomorrow night if you wish, is all about the longest night of the year and knowing that the Sun returns and the days will lengthen once again.  Think about what our ancestors were thinking on this night.  They were hoping they had enough food put away for the long, hard Winter.  Winter was hard, no doubt!  Isolation, hard work, chopping wood for warmth, and making sure that their livestock survived the long, cold, dark season..along with themselves, had to be a scary time for them.  We are so blessed these days. But for tonight, perhaps pretend what it was like to be them.  Light a fire and keep it stoked.  Light candles all over the house. Turn off the tv, get off the electronics (which I will do as soon as I’m done with this writing 🙂 and perhaps just sit quietly and think, ponder, remember, cherish or make new memories.  What do you wish for yourself and your loved ones in the coming months? What do you need to let go of to be happy and content in your life.  Are there relationships to repair or depart from?  Is there a project you want to take on over the Winter?  Do you have a huge stack of books you’ve been dying to read?  (I do! )  Well, now you will have the time…most likely.

Beltane Recipes 2015………

Merry Meet my friends and readers!  It’s a beautiful sunny Sun Day afternoon here in Ohio.  Having said that, it’s been quite cold and quite windy!  This past week we had a small tornado hit a street in my neighborhood, just 3 blocks away!  We also had freezing temps at night and heavy frost 2-3 mornings. So Spring is still….well…2463875500_7b6e892984_olike it always is here in April. LOL.  It’s been cold enough we’ve had fires going in our fireplace for several evenings..which of course, I Love.

Looking outside though, the green is vivid, trees are bloomed or blooming, plants are coming up and some people have jumped the gun (in my humble opinion) and already planted new flowers in their beds.  At my house, a new garden bed is going in by the end of the week, at least, the sod will be pulled up and it will be mulched.  NO planting until closer to Mother’s Day or we risk losing the plantings.  My perennials are coming up nicely..most of them anyway.  I will have to do some replacing here and there.  I have garden ideas spinning in my head and I’m aching to get on it…but I must be patient.   One thing I was excited about…I finally got a rain barrel!  It’s from http://www.greatamericanrainbarrel.com company and it’s hooked up already.  Thanks to recent rains, it’s already got 60 gallons of fresh rainwater ready to go! I also love these particular barrels because they are recycled olive barrels..what a great way to use them.  It makes me feel great to be conserving water and nothing is better for plants than rain water 🙂  I’m a very happy Witch about that!

I have been perusing recipes for Beltane and thought I would of course share a couple.  If you want more recipes, just do a Beltane Recipe search over on the right and you’ll find more.  Also, as you may know, I also am the Kitchen Witch for Imramma Magazine (link to the right) and there are more Beltane recipes there.  The issue just came out today.  AND every week, I also do recipes for The Sunday Stew (link on the right).  The Stew is out every Sunday except the Sabbat issues of Imramma. Okay?  Be sure and check both out ……there are a lot of great writers, bloggers, news stories, info etc in these publications.  I’m proud to be a writer for them.

Foods that correspond to Beltane are: Dairy, honey, oats, red fruits, herbal salads, May wine, red/pink wine, fruit punch, large round oatmeal cakes, and sweets. Keeping those in mind, here’s a couple recipes for you to consider making for you feast!

Oatmeal Cake with Caramel Icing

For Cake:
1-1/4 cups boiling water
1 cup quick-cooking oats
1/4 cup butter, softened
1 cup packed brown sugar
1/2 cup sugar
2 eggs
1/4 cup unsweetened applesauce
1 teaspoon vanilla extract
1-1/2 cups all-purpose flour
2 teaspoons baking powder
3/4 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
For Icing:
1/2 cup packed brown sugar
1/4 cup butter, cubed
1/4 cup fat-free milk
1/2 teaspoon vanilla extract
1/8 teaspoon salt
1-1/2 cups confectioners’ sugar

In a small bowl, pour boiling water over oats; let stand for 10 minutes.
Meanwhile, in a large bowl, beat butter and sugars until crumbly, about 2 minutes. Add eggs, one at a time, beating well after each addition. Beat in applesauce and vanilla. Combine the flour, baking powder, cinnamon, baking soda, salt and nutmeg. Gradually add to creamed mixture. Stir in the oats. Pour into a 13-in. x 9-in. baking pan coated with cooking spray.  *You can use a bundt pan too!
Bake at 350° for 18-22 minutes or until a toothpick inserted near the center comes out with moist crumbs. Cool completely on a wire rack.
For icing, in a small saucepan, combine brown sugar and butter. Bring to a boil over medium heat, stirring constantly. Cook and stir for 1 minute. Gradually whisk in milk. Return to a boil. Cook and stir 1 minute longer. Transfer to a small bowl. Stir in vanilla and salt. Gradually beat in confectioners’ sugar until smooth. Immediately spread icing over cake. Let stand until set.

 

This next recipe isn’t really a recipe, but a wonderful way to get in some fruits and dairy for a Beltane treat.

Fruit and Cheese Skewers

6 Bamboo skewers

12 miniature balls fresh mozzarella cheese

12 small basil leaves

12 large blackberries

Balsamic vinegar

Thread each of the 6 skewers from the bottom to top with cheese ball, basil leaf and blackberry and repeat again so there are 2 of each item on the skewer

Serve cold, drizzled with small amount of balsamic vinegar.  Delicious!

*You can of course change this up however you like.  You use other berries like strawberry, blueberry, or raspberry.  You can use a different cheese too if you like.

 

And for something good with honey 🙂

 

honey lemon iced tea1

Cold Lemon Honey Tea

4 cups water

3 inches fresh ginger, thinly sliced

1/4 cup loose-leaf Darjeeling tea or other loose-leaf black tea

1/2 of a 12-ounce can (3/4 cup) frozen lemonade concentrate, thawed

1/3 cup honey

Ice cubes or crushed ice

Lemon slices and fresh mint for garnish

Vodka, gin or bourbon (optional)
In a medium saucepan, bring the water and ginger to boiling. Remove from heat. Add tea. Cover and let stand for 10 minutes. Pour tea mixture through a fine mesh strainer; discard ginger and tea leaves.

Transfer tea to a 1 1/2-quart pitcher. Stir in lemonade concentrate and honey, stirring until honey is dissolved. Cool for 30 minutes. Cover; chill for at least 4 hours or up to 24 hours. Stir before serving.

Serve punch in glasses over ice. Garnish with lemon slices. Chill remaining tea for up to 1 day.

For a single cocktail, pour vodka, gin, or bourbon (to taste) into a ice-filled glass; then add the lemon honey tea.

*I most definitely add a bit of vodka 🙂

Ostara Recipes 2015………..

IMG_0857Merry Meet everyone and Happy Sun day!  It’s been a busy day here today.  My hubby is working on projects around the house and I had the laundry and the grocery to do.  Also, yesterday we had our ugly beige hallway and guest room painted in beautiful shades of green and “Vast Sky” blue, respectively.  So I had to put pictures back up on the wall, put everything back in it’s place etc.  The boring beige in the whole house is GONE and my home is warm in color as I like it 🙂  The Sun has been shining and we were in the mid 50’s…a lovely day but a bit chilly when the winds blow.  Tomorrow however we can look forward to hitting 70*! How wonderful!

Spring has sprung here..I believe it truly has!  Our bird and squirrel feeders are active.  I’ve seen cardinals, finches, mourning doves, and even two gorgeous male blue jays!  The squirrels are having a feast as well lol. There are tulips coming up in some areas, snow is all gone, and of course the days are getting longer.  I don’t see trees budding quite yet.  Now I live in Ohio, and I KNOW that we can see snow yet in April lol…but I think we can put Winter to bed pretty much 🙂  How about where you live?

I was perusing a few Spring issues magazines today.  I just love them don’t you?  There are always flowers and green and pastels on the covers.  So light and airy.  While I was looking thru them I found a few recipes I thought would be perfect for Ostara and thought I’d share them with you. They would be great to put in jars and take to the park for a picnic on a Spring day, great for your family gathering, and well, just for something light and healthy for every day!

 

Strawberry-Orange-Salad-with-Syrup-1024x678

 

Fresh Fruit Salad with Lime Syrup

1/2 cup sugar

2 Tbs lime zest

1/4 cup fresh lime juice

1/4 cup water

3 cups fresh orange segments

2 cups fresh strawberries, sliced

1/4 cup fresh mint leaves, chopped

1/4 cup sliced almonds, toasted

In a small saucepan, combine sugar, and next 3 ingredients.  Bring to a boil over medium high heat, stirring occasionally until sugar dissolves.  Remove from heat, strain through sieve into a small bowl.  Let cool completely.

In a large serving bowl, combine fruits and mint.  Add lime syrup, stirring to combine.  Cover and chill for at least an hour. Sprinkle with almonds before serving.

Spring Pasta Salad with Dill Vinaigrette

8 oz package orecchiette pasta

1/4 pound asparagus, trimmed, cut into into 1 inch pieces and blanched

1/2 cup diced carrot

1/2 cup diced yellow bell peppers

1/2 cup Dill Vinaigrette *see below

Garnish:  Fresh dill

 

Cook pasta according to package directions.  In a large bowl, stir together asparagus, carrot and peppers and pasta.  Add Dill vinaigrette stirring gently to coat.  Cover and refrigerate for at least an hour.  Garnish with chopped dill.

 

Dill Vinaigrette

1/4 cup vegetable oil

1/4 cup extra-virgin olive oil

3 Tbs white wine vinegar

1/2 tsp sugar

1/4 tsp kosher salt

1/4 tsp ground black pepper

1/4 tsp Dijon mustard

In a small bowl, whisk together all ingredients.  Cover and refrigerate for 2 hours or up to 3 days.

*I happen to think this recipe would be great with a greek or italian dressing too 🙂

Lemon Cupcakes with Lemon-Lime Glaze

*makes 12 cupcakes

1 1/4 cups all-purpose flour

1/2 tsp baking soda

1/4 tsp salt

1/2 cup unsalted butter, at room temperature

1 cup sugar

1 egg, room temperature

1 tsp vanilla extract

1/2 Tb lemon zest

Juice of 1 lemon

1/2 cup buttermilk, divided, room temperature

Lemon-Lime glaze *see below

Preheat oven to 350*  Line a 12-cup muffin tin with cupcake liners

In a small bowl, combine flour, baking soda and salt.  In the bowl of a stand mixer, beat together butter and sugar until light and fluffy, about 3-5 minutes.  Add egg, and mix until blended.  Add vanilla, lemon zest and lemon juice, and mix until well blended.

*be sure to read this closely before starting 🙂  Working in batches, add 1/3 of flour mixture. Beat until combined, scraping down sides of bowl.  Add 1/4 cup buttermilk; mix completely; scraping bowl.  Add second batch of 1/3 of flour mixture; scraping down sides of bowl.  Add remaining 1/4 cup buttermilk.  Finish with last of flour mixture, scraping down sides of bowl until all is fluffy!

Pour batter into baking cups, filling each about 2/3 full.  Bake for 18 minutes or until toothpick comes out clean.  Let cool completely.

Lemon-Lime Glaze

1 1/2 cups confectioner’s sugar

2 tsps fresh lemon juice

2 tsps fresh lime juice

In a small bowl, whisk together all ingredients.  Pour by spoonfuls over cupcakes.

Don’t they all sound wonderful….so fresh and reminding of Spring 🙂  Hope you give them a try! Remember to stir in some magick while cooking!

The Wheel Turns to Samhain 2014……….

imagesCA0GN85BMerry Meet my friends.  I have been so busy I’m very late coming to my blog to write about my favorite Sabbat!  It should come as no surprise to anyone that it’s my favorite.  I’m a Witch after all!  Samhain is the Witch’s New Year, the night the veil between the worlds is the thinnest, the night we can commune with our ancestors who have passed on, and of course, it’s the night many Witches love to put on all of their witchiest clothes, jewelry and of course our pointy hat! For me, this year, it’s also Beggar’s Night. Little ones will be coming to my door looking for candy (my grandkids will be doing that here too!)  The leaves are falling, the nights are cold and crisp, the wind blows, pumpkins are lit, adults and kids alike shiver with both a little bit of excitement and a little bit of something magickal!

For Samhain night, my family will gather here  for dinner, a fire and of course to pass out candy and for the grandkids to go trick or treating in my neighborhood.  After the little goblins have gone home with their parents, I will do my own quiet ritual. Divination to hopefully have my ancestors come thru to me will be done.  Also, an offering to Mother Earth as she slowly quiets and goes to rest for the Winter.  I also always express my gratitude to God and Goddess for the abundant Summer and beautiful Autumn season of growth and harvest both in my garden beds but within me as well.  As the Wheel turns, I too change and grow…no matter how old I am…I still do.

On Saturday night, my Circle will gather in full Witch regalia for fire, feast, and ritual.  Dressing the part is such fun for Samhain, as of course, we don’t walk around in black dresses, striped socks and pointy hats on a regular basis 🙂  We will honor our loved ones who have passed on, including our beloved pets. We also will have quiet discussion together on what the past year has brought for each of us, and what we look forward to in the next year.  On Sunday evening, my hubby and daughter and I will have a Dumb Supper or Ancestor Supper. This will be a quiet and introspective evening for me especially.  I always look forward to the fun and busyness of this Sabbat…but it’s the quiet times that have depth of meaning.  The quiet can bring messages from our ancestors, from Goddess and from our own conscience.  Always find time to be quiet and still and to listen.

One of my most popular blogs here over the years, has been my Samhain Recipes.  I’d like to go ahead and give you a few this year too.  If you have been following Samhain’s Sirens this year (button on the right side here) you will have already seen these recipes…but I will share them again here for those who haven’t.

Autumn’s Spiced Apple Cider

*The perfect Samhain drink….add rum or vodka if you wish 🙂

 

1 gallon apple cider

15 whole cloves

10 whole allspice

1 TB candied ginger

12 cinnamon sticks

1 cup packed brown sugar

Combine all ingredients except sugar and bring to a boil in a large pot on the stove.  Lower heat, add sugar and simmer 15-20 minutes.  Strain and serve or place in a thermos for your picnic or drive.  You can keep it warm on the stove or crockpot all day long.  Store the leftovers in the fridge.

*If you like, place orange slices in the pot too..adds a sweet bit of tang!!

Apple-Brie Crostini

These little toasted Crostini are a wonderful appetizer to serve for any Samhain gathering!   They are sweet and wonderful.   Great for an after dinner treat too!

 

1 loaf French bread, thinly sliced

1/4 cup butter, melted

1/2 cup brown sugar, packed

1/2 cup chopped walnuts

13.2 oz pkg Brie cheese, thinkly sliced

3 Granny Smith apples, cored and sliced

Arrange bread on an ungreased baking sheet; bake at 350* until lightly toasted. Set aside.

Mix together butter, sugar and walnuts.  Top each slice of bread with a cheese slice, an apple slice and a teaspoonful of butter mixture.

Return to baking sheet; bake briefly until cheese melts.  *Makes 24-30

**Variations….a sugared pecan with a drizzle of honey to top it…or a nice dollop of apple butter!

 

Farmer’s Market Autumn Stew

*A great way to finish up your Summer harvest or that last visit to the Farmers Market veggies!

 1/2 lb stew beef, cut into small cubes

2   1/2″ thick boneless pork chops, cubed

1 TB olive oil

2 carrots, peeled and chopped

2 parsnips, peeled and chopped

2 potatoes, peeled and chopped

1 stalk celery, chopped

2 apples, cored, peeled and cut into small cubes

2 TB quick-cooking tapioca, uncooked

1 cup apple cider

1 cup water

2 tsps beef bouillon granules

1/4 tsp pepper

1/4 tsp dried thyme

1/4 tsp dried rosemary

Salt to taste

Brown beef and pork in oil in a large skillet over medium heat; drain.  Place vegetables and apples in a slow cooker; sprinkle with tapioca. Add beef and pork.

Combine remaining ingredients in a small bowl; pour over beef and pork. Cover and cook on low setting for 8-10 hours or on high for 4-5 hours. Add salt to taste before serving.

*Makes 6 servings

Chocolate Chip Pumpkin Cake

 

1 15 oz can of pumpkin

4 eggs, beaten

1 cup vegetable oil

2 cups sugar

3 cups all-purpose flour

2 tsps baking powder

2 tsps baking soda

2 tsps ground cinnamon

12 oz bag of semi-sweet chocolate chips

 

Preheat oven to 350* In a large bowl, mix together pumpkin, eggs, oil and sugar.  Mix in flour, baking powder, baking soda and cinnamon.  Stir in half the chocolate chips.  Pour batter into a greased and floured Bundt pan.  Sprinkle remaining chips over batter.

Bake at 350* for one hour, or until golden brown and inserted toothpick tests clean. Cool then remove from pan.  Top with fresh whipped cream to serve if you wish.

*Makes 12-16 servings.

I have gotten my Samhain altar done finally today. I particularly love Samhain altars.  This one literally gives me goosebumps.  Most of the time my altars are outdoors…simple and only a few necessities, but for Samhain, I love to go all out!  As you can see 🙂

I’m working on writing up the rituals for my Circle gathering, and have a few cards to do yet.  But I am also very relaxed, using the fire in the fireplace to help me meditate, and again…..finding quiet time.  I hope you’re doing the same.  What loved one do you hope to hear from? What will you decide to let go in the old year and bring forth in the New Year?  Think on these things my friends.  Witch or not!

October and Samhain’s Sirens……….

Merry Meet everyone!  I hope that you all had a very Blessed Mabon and that Autumn has finally come to your neck of the woods.  I love October! It’s my very favorite month of the whole year lol..as all of you who know me or have read anything here know.  My name ought to give it away as well.  I come so alive when Autumn comes…my heart is brighter, my steps are lighter, my energy level is high and I relish every moment of this most wonderful time of the year! How does it make you feel?  Are you loving every minute or are you just dreading that Winter is coming?  I sure hope that you are all loving it!! Most of my Witch friends of course, are loving it! 🙂

“Crispy air and azure skies,

Scolding sparrows on the lawn,

Here in Ohio we are finally having Fall weather.  Nice days with cool nights.  We were very dry but finally, yesterday and today, we got some rain.  The leaves are changing color…brilliant reds have started and some trees are losing their leaves like crazy already.  We are having fires in the fireplace (so so cozy!), the crockpot is in action and I’m in the mood for homemade breads, baked goods with apples and pumpkin, and soup!  Today, it didn’t get out of the 40’s and I had to wear a sweater!! Yay!!  I have decorated the house for Fall, my spice scented candles are lit often, and wood is stacked at the back door, ready to give us cozy, warm fires for the next few months.

Our garden beds are cleaned up of all the flowers that are spent or ready to be cut back.  I harvested the last of almost all my herbs.  Fennel seeds are still maturing and I always leave some lavender and rosemary for my Samhain altar and Ancestor supper table. I got more then three harvests from my herbs this year. I so loved it and will miss my herb bed over the long Winter.  But I have lots of dried herbs for cooking, my herbal potions and products and of course, for Magick!

Mercury has gone retrograde today (uh oh) and we are waxing to the Full Blood Moon.  The veil is thinning..can you feel it?  The wheel is spinning fast to Samhain.  Too fast!  September flew by and I want time to slow down now so I can savor every moment of this delicious Season.

Breathe in the crisp air and scent of woodsmoke,  listen to the wind through the beautiful colored leaves of the trees, look for that waxing Moon, feel the Earth beneath your feet before She’s covered with snow, and have a taste of tart cider or apple.  Be grateful for the beauty of this time of year!  Mother Earth is giving us quite a show before She goes quiet to rest.  Blessed Be!

Merry Meet my friends!  Autumn has arrived here in Ohio!  Even though Mabon isn’t until the 23rd, Autumn is here none the less. I for one, couldn’t be more Happy about it! My favorite time of year!!  Already I feel like a heavy load has been lifted.  The heat and humidity of Summer makes me feel heavy, weighed down, and tired.  I am energized as the cool days and even cooler nights are upon us.  We have had our first (and second and third) fires in the fireplace!  There is nothing more cozy to me than a fire on an Autumn evening.

My oven has been busy with baking. My crockpot is on the counter permanently, garden beds are cleaned up of flowers that are spent and I’m about to harvest a huge amount of herbs..most of them for the last time this year.  Summer couch covers are washed and put away, warm blankets have been brought out, the chimney and furnace have been inspected and cleaned, a cord of wood has been ordered, and Winter clothes are in the closets and Summer clothes put away for next year.  Autumn cleaning is near finished.

We are seeing some color in the leaves already as I showed you on my last posting.  Some trees have lost their leaves completely, but there is LOTS of color still to come.  Bees still abound in my gardens. Birds, squirrels, chipmunks, and other ground animals are gathering frantically.  This morning I had a huge amount of activity at my bird and squirrel feeders.  I had a couple dozen mourning doves, a pair of cardinals, 3, yes 3! male blue jays, a Flicker woodpecker and multiple finches, sparrows and other small birds.  Our white squirrel Luna, other gray squirrels and several chipmunks were also scurrying and gathering! It was wonderful to watch.  I still have my hummingbird feeder up for migrating hummers, but we haven’t seen one for a few days now. If you don’t already, please think about feeding these animals and birds…to help them through the long hard Winter we are being promised again this year.  You will get so much pleasure out of it!

My Mabon altar is set up and plans are made for my Circle/Tribe to meet on Sunday evening here.  There will be an outdoor fire, weather permitting, desserts, spiced cider and good company!  Several of us are also attending our local Pagan festival on Saturday which we are looking forward to.  For several of us, it’s our first time to go!  I am usually on vacation this time of year so haven’t been able to attend.  I can’t wait!

 

Yesterday, I was flipping through a Taste of the South magazine and came across a recipe that sounded so yummy I thought I’d share it here with you.  It sounds soooo spicy and good for Fall!  The picture is theirs as well.

Orange-Cardamom Bread

3 cups all-purpose flour

1 1⁄2 teaspoons salt

1 1⁄2 teaspoons baking powder

2 1⁄2 cups sugar

1 1⁄2 cups whole milk

1 cup vegetable oil

3 large eggs

2 tablespoons orange zest

1 1⁄2 teaspoons vanilla extract

1⁄4 teaspoon ground cardamom

Orange Glaze (recipe follows)

Preheat oven to 350°. Spray 2 (8×4-inch) loaf pans with nonstick baking spray with flour. Set aside.
In a medium bowl, sift together flour, salt, and baking powder. Set aside.
In another medium bowl, beat sugar, milk, oil, eggs, zest, vanilla, and cardamom at medium speed with an electric mixer until well combined. Gradually add flour mixture, beating until smooth.
Divide batter evenly between prepared pans.
Bake 30 minutes. Loosely cover with aluminum foil, and bake until a wooden pick inserted in center comes out clean, approximately 30 minutes more.
Let cool in pans 10 minutes. Remove from pans, and let cool completely on a wire rack.
Drizzle with Orange Glaze.

 

Orange Glaze
2 cups confectioners’ sugar
1 teaspoon orange zest
1⁄3 cup fresh orange juice
In a medium bowl, stir together confectioners’ sugar and orange zest and juice until smooth.
I will be making this recipe this week.  It sounds yummy!  I think my Circle ladies will like it! 🙂  I hope you try it too!
I am most anxious for the next couple months of Autumn weather and the first snows of Winter.  There is just something about this time of year to me.  I call it nesting…coming indoors.  Warmth of fire, smell of woodsmoke and candles, something simmering on the stove or baking in the oven, warm beverages, perhaps crochet or a book on my lap (and a cat or two of course) are all just so cozy to me.  I turn more inward, I am a bit less busy, more time for introspection, journaling, writing, reading etc.  Having said that, this is also my favorite time of year to go for a walk, to spend time walking on crisp, bright colored leaves in my warm jacket and gloves, seeing Mother Earth in all her glory….well it’s just a NEED!  I know many of you have the same need!  To grab every minute we can of the beauty that is our Mother.
