Bits and Pieces……..

daffodils_in_snow_Wallpaper_caq12Merry Meet my friends!  It’s Sun day….and it’s snowing and blowing outside.  Winter still has us in her grip.  Here in Ohio that is perfectly normal.  Spring doesn’t come for us until April and well into it too!   We were predicted at one point to have up to a foot of snow coming but it has been dropped back to 4-7 inches.  However, I’m not sure we’ll even get that.  We only have an inch so far.  It’s very pretty to watch on a lazy Sun day at home so I’m enjoying it.  Hope you all are safe and sound and tuckered in depending on whether you are getting the rains out west or the snow in the midwest and east.

My post today is about a few things I wanted to talk about.  I have given this blog a lot of serious thought lately. I debated not writing anymore.  I just had my 4th year anniversary here and I just wasn’t sure I had it in me to write here in anymore. I think I was losing my muse to write.  However, after some thought, I decided that I enjoy writing for my own enjoyment and will continue.  I’m grateful to my readers who seem to enjoy it too!  I am going to change up my writings a bit though.  I want to write MORE!  In the future, I’ll be doing posts about herbs, crystals, other blogs I want to feature, books, gardening, recipes, witchy craft pages of my friends,  and just more about my life as a Witch.  How I live it everyday.  I’m excited to take my blog in a new direction! I’ll also be working on my blogroll..updating, taking away those who aren’t writing anymore and adding some wonderful blogs I’ve discovered!

I was asked to come on as the Herbalist Witch and I am enjoying it tremendously.  The Stew has been around for some time..I’ve been reading it for some time.  I was so honored when my friend and blog owner Kallan Kennedy asked me to write for the Stew.  It comes out every Sun day morning.  Lots of great news articles, other bloggers thoughts and ideas, info on totems, tarot, businesses, recipes, spells and rituals and really a great read!  You can follow the blog via email or network blogs to be sure that the Stew shows up in your inbox every Sun day as well! Be sure to check it out.  I started writing at the end of December…so go back and check out my herbal info and recipes!  I have made some amazing new friends amongst the other writers and feel very blessed!

Along those lines, I have started working, finally, on getting my Herbalist certification thru Rosemary Gladstar’s home study course.  I’m really excited !  I signed up right before I had the brain bleed nearly two years ago, and needless to say, it got set aside while I healed.  Then we moved, then etc etc etc and it always seemed to be put aside.  Now I’m making it a must do and I’m learning a lot!  The course is well written, beautifully presented in a huge binder, and makes you do the homework etc.  It’s just great! I highly recommend it! Here is the link for that!

Ostara is coming up fast!  Yes, my friends, despite the Winter we’ve had, Spring WILL come! We’ve even had a few days here and there that brought to mind a beautiful Spring day!  My mind has turned to my gardens, herbs, being outside with my feet on Mother Earth’s soft ground without snow! I want to get my hands dirty, plan and plant.  As we are in a new home, just a year now, I have more beds to landscape and plan. So much fun to think about doing…and even more fun to DO when I can!

Oh despite the snow and frigid cold days, I can feel the Wheel turning as most all Witches can!  The movement of Sun and Moon have changed, the days are longer, the shadows cast by the trees have changed.  The behavior of the birds and ground critters is different..I’m even seeing Robins!  Even here in Ohio there is Spring flowers trying to bloom and some bushes are showing buds.  As much as I love Winter, I am looking forward to Spring!  What are your plans for Ostara, for Spring?  Spring cleaning? Planting your seedlings indoors?  Gathering with friends to feast? Dying eggs? Putting up new wards and protection for your home and those who dwell there?  Cleansing your tools, altars, crystals and home to prepare for Spring?  All are wonderful ways to prepare for Spring and for the awakening of Mother Earth!

The Wheel Turns to Imbolc, 2014……..

Wow..I can’t believe I just typed 2014!  Time flies so fast doesn’t it?  I hope this posting finds you all avoiding the flu, staying safe and warm in this incredibly frigid Winter we’re having, and that things have slowed down for you a bit! That you’ve had time to rest and relax. After all January is the best month to do that!  At least here in the Northern Hemisphere 🙂

I have been busy, both doing my yearly Imbolc deep cleaning and organizing, AND finding time to read, journal, take a nap, cook etc. Things I enjoy doing.  Imbolc is coming fast.  I love this Sabbat. As I’ve said before, it’s the first one I celebrated.  I mean truly celebrated it by stopping reading about it and getting up and doing something instead!  I decided not to try to do all the complicated things I was reading in my books..and just do what felt right….  and I haven’t looked back since!

This Imbolc I’m blessed with having my Circle of fellow Witches.  We will be meeting to celebrate Imbolc for a breakfast..to welcome the Sun..and we will do it in our jammies! LOL..something fun to look forward to.  It’s our first Imbolc gathering and won’t be our last I’m sure.

As I mentioned, I do my Spring cleaning early, for Imbolc, as I know a lot of you do.  I clean out closets and cupboards and drawers, getting rid of junk and organizing things better.  I dust high and low, move furniture and sweep and mop, baseboards, ceiling fans etc.  I clean my Witch cupboard out..dust it and cleanse and consecrate my tools again.  I smudge the house the day  before Imbolc, and put out new wards and protection.  It’s a busy Sabbat and a very satisfying one!

Magickally, I welcome the Sun on Imbolc morning, and that evening there is a fire of course. I burn any dusty old herbs that are still hanging and any greens, pinecones etc that are still around from Yule. Candles are lit all over the house.  We feast and drink and celebrate, knowing that while Winter still has it’s grip on us, Spring and Sun and longer days aren’t far behind! At Midnight, I throw open the doors and invite the Goddess Brighid in to my home..to protect and bless us for the coming year!

I’m already dreaming about my gardens..planning what I want to plant, what I want to add or take away etc.  This year, as we have just been in this house one year now, there is LOTS to do yet!  Another raised bed will be built for my herbs, there will be holly bushes, lilac bushes and an elderberry tree added in the landscape.  We need to add two new trees..maples…one to the front yard and one to the back.  I’ll fine tune what I did yesterday, throw out what didn’t work and baby along what did.  *sigh*…there is nothing better then the Sun on my back and my hands in the dirt.  I can’t wait!

As you all know, I love Winter, but even I am getting tired of this frigid cold we’ve had this year.  I don’t mind the snow at all, but the cold is something else! I see so many talking about being tired of it already, feeling depressed, or cabin fever etc.  I totally understand.  All I can recommend is that you take the time to do something that you really love doing and do it.  Take a class, paint a room, re-decorate, work on your Book of Shadows or grimoire. Surround yourself with things and people who comfort you, watch great movies, sleep more, take a walk..even when it’s cold..just to get fresh air, read, dance, sing, make love…you get the picture! LOL.  Don’t give in to it if you can.  I find stepping out and breathing in cold, clean AIR does a lot to energize me..especially if the Sun is shining or the Moon is glowing! And there is always a cleansing bath…that makes everything better indeed!

The Wheel Turns to Beltane 2013……..

thCA8K56D9Merry Meet my friends! Spring has Finally spring here in Ohio!  Though there has been fluctuations…40* one day, 80* the next! …..Spring none-the-less has bloomed.  Spring flowers, flowering bushes and trees are all blooming.  Birdsong in the mornings and I love seeing them at the feeders again…cardinals, finches, sparrows, even woodpeckers!  Squirrels, chipmunks and rabbits are scampering around, kids are playing outside again and adults are working in their yards and gardens.

I had a birthday a few days ago…my 55th! (gasp!!)  🙂  For my birthday present, my hubby built me a raised bed for my veggies and herbs and he put up a clothesline! Something I have missed having in my yard for 16 years!  I finally live in a house with a yard that is sunny enough to have one! You have no idea how excited I am about this LOL…it’s a big deal!  To me, there is nothing like the fresh, clean scent of clothes that have hung outside in the Sun and breeze 🙂  A clothesline brings back wonderful memories for me.  In my mind’s eye, I see my grandmother in her housedress and apron, happily pinning up her linens and clothes while I tag along, with the pins, putting my nose in each and every piece to breathe in the great scent!

My granddaughter, who is 4, was here when I hung out my first load of linens and clothes.  I was overjoyed as she immediately wanted to know what I was doing and why.  As soon as I hung up the bright pink sheets, she did what all kids do..she ran thru the damp sheets, laughing and putting her nose right in them..just like her mommy, my daughter, did when she was a little girl 🙂  I believe more happy memories are being made with that clothesline 🙂

Beltane is coming up fast! May 1!  Beltane….marking the coming of longer, warmer days, gardens in bloom, faeries scampering thru the flowers and Mother Earth becoming full and in bloom!  Maypoles are erected and danced around, May baskets are happily filled with bright flowers and left on doors, and love and lust is rising in the hearts and souls of young and old alike.  Beltane is a happy, energetic, fun Sabbat!

Here at my house, we will have an outdoor fire and a great meal full of fresh veggies and fruits…a nice light meal.  I’ll start planting my pots of herbs, planting crystals and blessings along with the them.  I’ll ask the Faeries to assist me in success in growing them big, full and magickally!  An offering will be made to Mother Earth and the Fae….honey, bread and wine…to show how grateful I am for their presence in my Life and in my gardens.  I’ll do a ritual under the waning Moon to celebrate the Sabbat as well.

For Beltane I recommend you spend some time outside, whatever else you do!  Take a walk, plant a tree or flowers, sit by a tree and listen to the breeze thru the young, tender leaves. Make up a May basket and surprise a friend or neighbor with I.  Visit a garden center or a botanical garden or a park. Plan a romantic night with your special someone..and remember! You are a special someone too…so do something for yourself!  One of my favorite things to do for Beltane is to collect some dew overnight…just set out a shallow bowl..and wash my face in it in the morning!  It is said to bring youth and beauty and Goddess knows at 55yo I could use the help 🙂  Try it….it really works!

Spring???………..

Merry evening friends!  Hope that you all had a very Blessed Ostara.  I know I did.  It was just a simple meal and a simple ritual but meaningful.  Did any of you try any of my recipes?  If you did, please let me know!  I’d love to hear about it.  I made my Dilly egg salad for lunch and it was yummy!

Now Spring?  Yea, in Ohio it’s not here yet! 🙂    We, as many of you, just had a huge Winter snowstorm on March 24-25.  We got about 7 inches here in my neck of the woods.  But I am NOT complaining at all.  I loved it!  It was beautiful and magickal.  Fell for about 36 hours straight.  Here’s a pic of the first morning……

Beautiful isn’t it 🙂   I have seen a lot of complaining about Winter being so long, Spring to slow to come etc.  I hear ya! I too can’t wait to lighten up my clothes, work in my garden, get outside!!   But I believe that Mother Earth knows what she needs more then we do and we should let her just do what she needs to do!!  Complaining won’t change it anyway..right?  I say make the most of each day, no matter what the weather and do something fun to enjoy it.  I made sure to collect some snow water and some nice-sized snowballs.  I will love pulling those out in  the heat of the Summer.  They will be great to let the grandkids play with them, take a chunk and let it run down my hot neck, or use it to make a slushy margarita!!  (Thanks Mike for that idea 🙂   To me, everyday is magickal if you look for it….now stop complaining! LOL!!

Spring..it’ll get here.  We already see the snow melting and will be in the 50’s for a couple days this weekend.  In the meantime, I am planning my garden, getting my lighter clothes ready, and perusing my cookbooks for lighter, healthier meals. I can’t wait to put my hands in the dirt and my face to the Sun and my back to a tree 🙂  I know that is what you all are ready for too!  Take heart…it’s coming!!

Blessed Ostara 2013……

Merry Afternoon!  It’s a very cold, breezy but Sunny day here in Ohio.  Winter is slow to leave despite the fact that Spring Equinox is tomorrow!  I believe we have another couple of weeks before we will start really feeling that Spring is arriving here. But the Sun is shining, the skies are blue and if you aren’t outside..you can imagine an early Spring day 🙂

We made it to and back from the Smoky Mountains.  We had a wonderful trip despite the fact that it was unseasonably cold there as well LOL!  All the locals were commenting about how cold it was and how abnormal it was for this time of year.  We did see some daffodils bloomed all over Cades Cove and some forsythia here and there but otherwise it was still Winter there too.  The mountains did my heart good, soothed my soul and helped me to breathe deeper and with great joy and satisfaction.  Of course we had fun with a bit of shopping at the Rock Shop and the Celtic Store 🙂  I was so sad to see about the fires in Pigeon Forge right after we left.  We passed that area more then once while we were there and it makes me so sad to think of the loss of cabins, trees,, and wildlife there.  So glad that no person was injured though.  The mountain will heal itself in time though and it could have been so much worse!

So tomorrow is Ostara and I just wanted to wish you all a Blessed day.  I hope whether Spring has arrived where you live or not…you find a way to have a spring in your step, and Spring in your heart by getting outside and noticing the changes that are happening with Mother Earth.  I know so many of my friends are talking about their gardens and seeds and getting ready..happily…to dig in the dirt and re-acquaint themselves with Mother Earth’s delicious dirt after it has been frozen all Winter long! I know I sure am!!

The Wheel Turns to Ostara 2013…….

daffodils in snowMerry Meet on this beautiful Spring-like day here in Ohio!  Spring has not arrived here yet…as a matter of fact we just had a huge snow storm dumping 4-9 inches, depending on where you live, of a very heavy wet snow!  (We got about 4-5 inches here).  But today it’s going to hit 50*..the snow is melting fast, the Sun is shining and it’s just beautiful outside.  Spring is not far at all from being here..both by date and by Nature 🙂

Ostara is on March 20th this year.  The first day of Spring..the Equinox.  Ostara for me always means new beginnings..a fresh start…and knowing that in no time I’ll be working away in my yard and gardens! This year I’m even more excited because I have a whole new yard to plan and design flower beds, garden beds, and landscaping for!  I’ve already been jotting down what bushes, trees, flowers I want to add to the yard.  I’ve been perusing garden catalogs and magazines looking for fresh ideas.

We have a smaller yard here..much smaller then the 2.5 acres we had before.  But we have more sun and I can garden to my hearts content in a smaller, maxed out space that I can handle without killing myself LOL.  We will be extending our patio, putting up a privacy fence first.  Then beds will go in around the inside of the fence..possible a raised bed for veggies and herbs and of course pots everywhere.  We already have a cute garden shed and I’m putting in a clothesline that I’m sooo excited about having again.  There is nothing better then the scent and feel of bedsheets hung outside to dry!  Big plans…can’t wait to have the weather break to start executing the ideas!

I will get a chance to experience a bit of Spring early because I’m leaving for Tennessee Monday for 5 days where it is warmer and Spring is blooming there already!  It’ll be nice to shed the winter coats and soak up some warmth there.  I love the Smoky Mountains as anyone who knows me knows…and I am in spiritual need of seeing them and being in them!!  It’s been 2 years due to my health issues and my daughter’s and our move and long overdue.  *Sigh*  …it’s my 2nd home…feels so peaceful and calm when I’m there.  Pure Bliss!

Now back to Ostara…it’s a great time to think about planting seeds to grow indoors, depending on where you live.  Don’t forget to bless those seeds to grow strong and healthy and magickally before you plant them!  It’s a great time to do your Spring cleaning if you haven’t already. Clean your windows and window coverings, shake out rugs or have them cleaned, freshen up worn out throw pillows, fluff cushions, clean out your fridge, organize your pantry and on warm days..throw open your doors and windows and air out that stagnant, old air in your home that’s been brewing all Winter!  Put away your heavy quilts and throws and lighten up for Spring!  Put away your winter woolies and pull out your lighter clothes.   Dust out the cobwebs and dust bunnies. You’ll feel so much lighter when everything is clean and fresh!

I came across a couple of recipes I thought would be lovely for Ostara and thought I’d share them with you ….I know you all LOVE recipes 🙂

Lemon-Thyme Curd Cakes

1 cup plus 2 tbs unsalted butter, softened

1 1/4 cups sugar

6 large eggs, at room temperature

1/2 tsp pure vanilla extract

1 1/2 cups all-purpose flour, sifted

1 1/2 tbs minced fresh thyme

1 tsp fresh lemon zest

1/2 tsp coarse salt

*1 recipe of Lemon-Curd Whipped topping

Preheat oven to 350*

Spray 6 (2 x 2inch) round cake pans with non-stick cooking spray with flour.  Set aside.

In a large bowl, combine butter and sugar. Beat at medium speed with an electric mixer until light and fluffy, 3-4 mins.   Add in eggs, one at a time, beating well after each addition. Add vanilla, stirring to combine.

In a medium bowl, whisk together flour, thyme, lemon zest and salt.  Add flour mixture to egg mixture in 3 batches, mixing until combined after each addition.  Spoon 1/4 cup batter into each prepared cake pan

Bake until a toothpick comes out clean, 16-22 mins. Cool in pan for 5 mins, then transfer to a wire rack to cool completely.

Wrap cakes tightly with plastic wrap, Freeze until firm approximately 2 hours.  Cut each cake into 3rds horizontally.

Place the Lemon-Curd whipped topping in a pastry bad with a medium round tip.  Pipe the topping between the 3 layers of cake and stack them.

Garnish with a sprig of fresh thyme.

 

Lemon-Curd Whipped Topping

3 cups frozen non-dairy whipped topping, thawed

1 cup prepared lemon curd

1/2 tsp pure vanilla extract

1/4 tsp coarse salt

In a medium bowl, gently fold together all ingredients. Transfer to an airtight container.  Refrigerate for 2 hours before using.

*This sounds like a bit of work but I think it’s so worth it!!  Sounds so refreshing and so pretty too!

Spring Mix Salad with White Balsamic-Apricot Vinaigrette

1/4 cup olive oil

3 tbs white balsamic vinegar

3 tbs apricot nectar

1/2 tsp minced shallot

1/4 tsp salt

1 (5 oz) bag of spring mix lettuces  (I say use the fresh stuff 🙂

3 tbs chopped dried apricots

3 tbs almond slices

1/4 cup sliced purple onion

 

In a small bowl, whisk together the olive oil, vinegar, apricot nectar, shallot and salt.  In a large salad bowl, place lettuces, top with apricots, almonds and onions.  Serve with vinaigrette.

Blessed Imbolc 2013……

imagesCA3UM5E2Merry Meet friends.  Hope this post finds all of you happy and healthy and enjoying your Winter (or Summer) so far.  I have been happily settling in to my new home, enjoying watching it snow, relaxing by the fire etc.  Despite the fact there are still boxes to unpack, I’ve had time for some fun family days, some reading or crochet, and visiting with old friends on an evening or a day out.

Tomorrow is Imbolc….one of my favorite Sabbats.  Besides the fact that it was the first Sabbat I celebrated, it is also a favorite because I view it as a new beginning Sabbat.  It is the Winter will be over soon, Spring cleaning, thinking of being outdoors gardening, and longer days Sabbat! What’s not to love about that!  Though I love Winter…I appreciate that the Wheel continues to turn and brings with it the warmth of the Sun and all that the Sun will bring!  Also, I’m devoted to Brighid and as this is Her Sabbat I enjoy honoring Her, inviting Her in to my home and listening to what She may have to say to me.

 

Here in Ohio, we have a couple inches of snow on the ground right now and below 0* degrees with negative wind chills temps!  Tomorrow, a big snow storm comes in!!  We expect about 4 more inches!  My Imbolc will be spent sitting by the fire, smudging the house, burning candles and incense, baking and cooking and my Imbolc ritual tomorrow night. My ritual may have to be inside because of the snow and the freezing cold but I’ll step out for a few minutes for some Moon time for sure!  My house is clean and organized (thanks to the fact I just moved LOL) and I can really enjoy the day.  As the Sun goes down, I’ll light the candles.  I’ll throw open the door and invite Goddess Brighid into my home asking for Health, Joy, Peace and Abundance for this coming year for my family and loved ones.

My altar will be very simple this year as most of my Witchy stuff is still in storage.  But a few candles,  some crystals, my Brighid’s cross and some blessing oil is about all I need.  Speaking of Blessing oil…here is my recipe for my Imbolc Blessing oil:

4 drops Ginger

3 drops Clove

The Wheel Turns to Imbolc 2013…..

imagesCAGEYQRXMerry Meet my friends. I’m having a quiet evening by the fire on a very cold, Moon-lit night and thought I’d write a post..catch you all up on a couple of things. The best thing I have to tell you is that my new grandson Henry came into the world this past Sunday..healthy and beautiful! Mom and baby both doing great and our family is overjoyed he is here. There is nothing like the miracle of birth and holding that precious soul in my arms..feeling him and smelling him…pure Bliss!

After a month now in our new home, we are more or less settled in. There are still some boxes in storage to go get and unpack but in general we are in 🙂 We love this home and it will be a good one for us. We are happy and content! We have done a LOT of work to make it ours…make it beautiful..make it magickal! With good results I’d say :))

Now Imbolc is just around the corner. Those who know me or have followed me here know that Imbolc is one of my favorite Sabbats..simply for the fact it was the very first Sabbat I truly celebrated as a Witch. I mean instead of just reading about it..I got up and DID something! When I got that feeling..that magickal feeling I get when I connect with my Craft..well that was it for me. I found ways to celebrate not only all the Sabbats, the Full Moons and New Moons, but made a point to bring magick into my Life and home every day!!

For me Imbolc is about looking forward to longer days of Sun and getting ready for Spring. But it’s also about enjoying what’s left of the Winter. I get my house sparkling clean, smudge it, use herbal washes on floors and windows, put something good to eat in the oven or on the stove, and do a project that will allow me to enjoy a cozy night by the fire, knowing that the early dark evenings won’t be with us much longer. I might work on pages for my Book of Shadows, do some studying on a subject like herbs or tarot. I might pull out garden books and seed catalogs and plan for my Summer garden, or make poppets for spells, or crochet something for someone I love. Of course, on Imbolc eve I will do a ritual at my altar or under the Moon (I love bundling up and going out to see the Moon and absorb Her magick and energy on a cold, see-your-breath night!).

My celebrations of the Sabbats….over time…have become simpler. Doing something to honor the day…the turn of the Wheel..can be as complex and simple as you want it to be. Depending on my mood I could do either..but I have found the simpler, deeper meaning moments to bring more magick into my Life and more Joy as well. A nice meal, candles lit, incense burning and quiet time with Goddess can be all that I need most of the time. Meditation..something I haven’t been taking the time to do here lately…can also be a lovely way to open yourself to what the Goddess wants you to know..to listen..to feel. I DO love..just after Sunset..to invite in the Goddess Brighid to bring health, love and abundance to my home and hearth..that is something I’ve done for years and I always feel Her presence when I do. Try it….just light red and white candles all over your house…take a candle with you to your door..throw it open and invite Her in!! See what happens!! Imbolc, after all…is Her Sabbat!

I came across a recipe I’d thought I’d share with you. I intend on making it for Imbolc.

 

lemon poppy seed loaf

 

Lemon Poppyseed Cake

2 1/4 cups cake flour

1 teaspoon salt

1 1/2 tablespoons lemon zest

4 1/2 tablespoons poppy seeds

1 1/8 cups white sugar

1 1/3 cups unsalted butter, softened

5 eggs

3/4 cup white sugar

3/4 cup lemon juice

Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9×5 inch loaf pan.

Stir together the flour, salt, lemon zest and poppy seeds using a wire whisk. In a medium bowl, cream together the butter and 1 cup plus 2 tablespoons sugar. Beat in the eggs one at a time. Then stir in the dry ingredients. Pour into the prepared loaf pan.

Bake for 60 to 75 minutes in the preheated oven, until a toothpick inserted into the center comes out clean.

To make the syrup, combine 3/4 cup sugar with the lemon juice in a small saucepan, bring to a boil, then remove from heat and set aside to cool. When the cake is done, place the pan on a wire rack with a cookie sheet underneath. Prick the top of the cake several times with a toothpick or fork. Brush the top of the cake with the syrup, allowing lots of it to run down the sides and soak into the cake.

Allow cake to cool slightly before removing from the pan to the wire rack to cool completely. When completely cooled, wrap the cake if foil or heavy plastic wrap and let it sit for 1 day before serving

Beltane 2012 Recipes……

Merry Meet friends.  As I told you all in my last post…my writing is a bit more sporadic,  due to the fact I’m still trying to recover from the brain surgery I had on March 21.  I was looking thru a new cookbook though and decided to put a few recipes here that I have either made or want to try…and soon 🙂  

A lot of you are sending me wonderful comments, messages, cards and are asking how I’m doing.  I thank you all so so much for it!   Let me just say that this recovery is slow..but sure.  I saw my neuro docs today..had a recent catscan and everything looks ok.  The headaches are still with me, will be for awhile, some cognitive issues, balance and shakiness…but the headaches are more tolerable and that is great!  I’ll stay on the meds for a while, restrictions have not been lifted, but maybe by mid June I’ll at least be able to drive again 🙂  

The weather here in Ohio has really been beautiful…whether a cold day or warm day.  Spring is here in all her glory. Our grass is green and lush and has been cut a few times already.  The herbs that come back each year…are back and growing great….like lavender, lemon balm, catnip, thyme, chamomile, and mints.  Knock out roses are big and budding. Lilies are growing, dianthus, ajuga, honeysuckle, all bloomed.  Frogs, birds, squirrels, chipmunks and even raccoons are scurrying all over the place too.  I’ve been hearing an owl hooting several nights now but haven’t see him yet.  I’ve had some porch time, and nights with a fire going LOL! That is Spring in Ohio!  I Love it and Mother Earth coming to life makes me happy I’m still here to see it and I feel like I’m coming back to life too! 

Beltane is coming up fast.  Because of my illness I’ve decided to celebrate Beltane in a quiet way rather then the dancing, festive, party way it usually is celebrated.  I will have a fire for sure with my family here.  We will have some good food, some wine, and spend time together by the fire.   My ritual will be simple…taking in the Moon Goddess energies and just being still…listening…quiet…resting.  Asking for healing and energy to continue for myself and those I love who need it too.  It will be lovely.

Now for the recipes….foods for Beltane can consist of these things….Dairy, honey, oats, red fruits, herbal salads, red/pink wine, punch, large round oatmeal cakes, and sweets.

I found a few recipes to post here I thought you might like.  Don’t forget to do a search for Beltane recipes I posted last year too 🙂 

Raspberry Lemonade

2 –  12 oz cans frozen lemonade concentrate, thawed

2 – 10 oz pkgs frozen sweetened raspberries, partially thawed

2-4 Tbs sugar ..to taste

2 liters club soda, chilled

Ice

In a blender, combine lemonade, raspberries and sugar.  Cover and process until well blended.  Strain to remove seeds.  In a 4 1/2 quart pitcher or drink dispenser, combine the mixture, club soda and ice.  Mix well.  Serve!   Add mint leaves to poured glasses for some extra taste!

 

 

Peach Oatmeal Pancakes

1 2/3 cups pancake mix

1 cup quick cooking oats, uncooked

1/2 cup brown sugar, packed

1 Tb cinnamon

2 egg whites, beaten

1 Tb vanilla extract

1 peach, pitted, peeled and diced

1/2 cup chopped nuts

In a large bowl, combine pancake mix, oats, brown sugar and cinnamon; mix well.  Stir in remaining ingredients.  Pour batter by 1/4 cupfuls onto a hot buttered griddle.  Turn pancakes when bubbles form and start to pop; cook other side until golden.  Makes about one dozen pancakes. 

 

Tree Hugger Granola

4 cups long cooking oats, uncooked

1 cup chopped pecans

1 cup sliced almonds

1 cup shredded coconut (optional)

1/4 cup canola or sunflower oil

1/2 cup honey

1/2 cup brown sugar, packed

2 Tb rum or pineapple juice

2 tsp vanilla extract

1/2 tsp cinnamon

1/4 tsp salt

In a large bowl, combine oats, pecans, almonds and coconut, if using; toss to mix.  In a separate bowl, stir together remaining ingredients.  Pour oil mixture over oat mixture; stir until everything is evenly coated.  Spread out on a lightly greased 15″ x 10″ jelly roll pan.  Bake at 325* for about 25 mins, stirring every 5-10 mins, until golden.  Allow to cool on baking sheet. Store in an airtight container.  Makes about 7-8 cups.

*Great for a Beltane day walk 🙂

 

 

Spinach Strawberry Salad

1 1/2 lbs spinach, torn

3 cups strawberries, hulled and sliced

1 sweet onion, thinly sliced

1 cup chopped walnuts

Arrange spinach, strawberries, onions and nuts in a salad bowl.  Cover and refrigerate.  At serving time, drizzle the following Poppy Seed Salad dressing over the salad.  Toss and serve immediately.  Makes 6 servings.

Poppy Seed Dressing

3/4 cup sugar

1 tsp dry mustard

1 tsp salt

1/3 cup cider vinegar

2 tsps green onion, chopped

3/4 to 1 cup olive oil

1 1/2 Tb poppy seeds

In a blender, mix sugar, mustard, salt and vinegar until smooth.  Add onion and blend until smooth.  With blender running, add oil slowly.  Blend until thick.   Stir in poppy seed. 

 

 

Tomato-Basil Pasta

8 oz pkg linguine pasta, uncooked

3 tomatoes, chopped

1/3 cup fresh basil, thinly sliced

1 clove garlic, minced

1 Tb olive oil

1/2 tsp salt

1/4 tsp pepper

3/4 cup shredded parmesan cheese

Cook pasta as directed on package; drain.  Meanwhile, mix tomatoes, basil, garlic, oil, salt and pepper in a large bowl.  Add pasta and parmesan cheese; toss lightly.  Serve immediately.  Serves 4.

 

 

Lacy Oatmeal Cookies

1 stick butter, softened

6 Tb light brown sugar

6 Tb sugar

3/4 tsp vanilla extract

1 egg

3/4 cup all purpose flour

1/2 tsp salt

1/2 tsp baking soda

1 cup quick oatmeal

Cream butter and sugars.  Add in all the rest of the ingredients except oatmeal.  Blend well.  Now add oatmeal and blend well.

Drop by teaspoonful on cookie sheet.  Tope with raisins if you’d like (I like them without as they are very thin, sweet and buttery!). 

Bake at 350* for approx. 10 mins or until soft and golden brown.  Cool

This recipe was given to me by my husband’s Aunt Nikki when we got married.  To this day it is a favorite 🙂  Oh…I would at least double this recipe..they will go fast!!

Merry Meet my friends.  Hope that you are having Spring weather, that your world is blooming and greening and warming like mine is.  However the last 2 days it has felt more like Winter then Spring..sunny days but frosty cold mornings!  The frost did a bit of damage to some of my herbs and budding trees and bushes..but they will recover just fine I’m sure.  I love seeing the birds, chipmunks, squirrels enjoying the weather as well as the frogs and fish in our pond.  My sister got some great pics of the frogs sunning themselves on rocks next to our pond.  I love frogs!

 

 

 

As you who read my last post know, I had brain surgery and was quite ill and in the hospital for like 11 days.  I am taking baby steps towards healing.  My last catscan showed some improvement and no new bleeds.  However, I have pretty severe headaches still, shakiness and dizziness, and alot of fatigue to deal with.  I’m told to expect that for awhile.  Another side effect, a bit of trouble focusing…which is causing me trouble with my writing, reading, even watching tv and playing words with friends LOL.   Because of that..I have had a hard time writing here on my blog and posts may be a little more sporadic for a little while.  Please bear with me while I heal….and my muse comes back 🙂 

 

We are coming up fast on Beltane…one of my favorite Sabbats because of the sheer Joy of it.   It is a fire festival, a welcome to the return of the Sun…..we celebrate longer days, warmer days…the greening of Mother Earth.  Witches are out in their gardens…tenderly planting, watering, weeding, designing and enjoying the feel of the warm earth, the Sun on our backs, the scent of the flowers and herbs and our bare feet in the green grass and rich brown dirt.   Meals are taken outdoors on patios and balconies.   We want to eat lighter and healthier, take walks, be more active.  Personally, one of my favorite things about the warm weather..is having my morning coffee on my front porch while I watch the Sunrise…and in the evening, again on the porch with a glass of wine and watch the Moonrise.  Even if you live in the city, in an apartment or condo…you can have pots of herbs and flowers to tend, to touch, to care for.  We dress lighter and in brighter colors, don our garden hats or gypsy scarves (especially for me this year with my shorn head LOL).  We want to be around water too..a pond, a pool, a lake, an ocean…even a kiddie pool is fun if thats all thats available!  I know I will have a blast with my grandbabies with their kiddie pool this Summer 🙂  

 

 

 Beltane!……  It’s about joy, love and lust, yes that kind of lust but also Lust for Life!  After making it thru the long, cold, dark Winter…we are again free to be outdoors, to enjoy nature, warmth, Sun and longer days.  Dance around a fire, feast, frolic with the faeries as they are very much part of Beltane.  Erect a maypole and invite your family and friends over to wind the ribbons and dance around it.  Set up a fairy garden and don’t forget to leave them an offering of a shiny crystal or stone or some honey and bread….. ask them to aid you in your garden.Rejoice with the God and Goddess in their Great Rite….laugh, be happy!! 

 

 

Another thing I really want to do this year…is to make up some May Day baskets for my friends and family…I love this idea of using a canning jar or even just a tin can…fill it with beautiful flowers and leave it as a surprise on the door….what a lovely gift! 

For me…this year especially…Beltane will be a most  joyous occasion..simply for the fact that I am still here…with my family and loved ones. I am so grateful for that.    I must say..Summer is not my favorite time of year….I love it until it gets too hot.  I don’t like being hot LOL!  However,  early Summer is just a beautiful time of year with it’s warm days and cool, comfortable nights.  I intend to enjoy every minute of it…and Beltane is a great way to start off a beautiful Summer Season!
