The Wheel Turns to Imbolc 2013…..

imagesCAGEYQRXMerry Meet my friends. I’m having a quiet evening by the fire on a very cold, Moon-lit night and thought I’d write a post..catch you all up on a couple of things. The best thing I have to tell you is that my new grandson Henry came into the world this past Sunday..healthy and beautiful! Mom and baby both doing great and our family is overjoyed he is here. There is nothing like the miracle of birth and holding that precious soul in my arms..feeling him and smelling him…pure Bliss!

After a month now in our new home, we are more or less settled in. There are still some boxes in storage to go get and unpack but in general we are in 🙂 We love this home and it will be a good one for us. We are happy and content! We have done a LOT of work to make it ours…make it beautiful..make it magickal! With good results I’d say :))

Now Imbolc is just around the corner. Those who know me or have followed me here know that Imbolc is one of my favorite Sabbats..simply for the fact it was the very first Sabbat I truly celebrated as a Witch. I mean instead of just reading about it..I got up and DID something! When I got that feeling..that magickal feeling I get when I connect with my Craft..well that was it for me. I found ways to celebrate not only all the Sabbats, the Full Moons and New Moons, but made a point to bring magick into my Life and home every day!!

For me Imbolc is about looking forward to longer days of Sun and getting ready for Spring. But it’s also about enjoying what’s left of the Winter. I get my house sparkling clean, smudge it, use herbal washes on floors and windows, put something good to eat in the oven or on the stove, and do a project that will allow me to enjoy a cozy night by the fire, knowing that the early dark evenings won’t be with us much longer. I might work on pages for my Book of Shadows, do some studying on a subject like herbs or tarot. I might pull out garden books and seed catalogs and plan for my Summer garden, or make poppets for spells, or crochet something for someone I love. Of course, on Imbolc eve I will do a ritual at my altar or under the Moon (I love bundling up and going out to see the Moon and absorb Her magick and energy on a cold, see-your-breath night!).

My celebrations of the Sabbats….over time…have become simpler. Doing something to honor the day…the turn of the Wheel..can be as complex and simple as you want it to be. Depending on my mood I could do either..but I have found the simpler, deeper meaning moments to bring more magick into my Life and more Joy as well. A nice meal, candles lit, incense burning and quiet time with Goddess can be all that I need most of the time. Meditation..something I haven’t been taking the time to do here lately…can also be a lovely way to open yourself to what the Goddess wants you to know..to listen..to feel. I DO love..just after Sunset..to invite in the Goddess Brighid to bring health, love and abundance to my home and hearth..that is something I’ve done for years and I always feel Her presence when I do. Try it….just light red and white candles all over your house…take a candle with you to your door..throw it open and invite Her in!! See what happens!! Imbolc, after all…is Her Sabbat!

I came across a recipe I’d thought I’d share with you. I intend on making it for Imbolc.

 

lemon poppy seed loaf

 

Lemon Poppyseed Cake

2 1/4 cups cake flour

1 teaspoon salt

1 1/2 tablespoons lemon zest

4 1/2 tablespoons poppy seeds

1 1/8 cups white sugar

1 1/3 cups unsalted butter, softened

5 eggs

3/4 cup white sugar

3/4 cup lemon juice

Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9×5 inch loaf pan.

Stir together the flour, salt, lemon zest and poppy seeds using a wire whisk. In a medium bowl, cream together the butter and 1 cup plus 2 tablespoons sugar. Beat in the eggs one at a time. Then stir in the dry ingredients. Pour into the prepared loaf pan.

Bake for 60 to 75 minutes in the preheated oven, until a toothpick inserted into the center comes out clean.

To make the syrup, combine 3/4 cup sugar with the lemon juice in a small saucepan, bring to a boil, then remove from heat and set aside to cool. When the cake is done, place the pan on a wire rack with a cookie sheet underneath. Prick the top of the cake several times with a toothpick or fork. Brush the top of the cake with the syrup, allowing lots of it to run down the sides and soak into the cake.

Allow cake to cool slightly before removing from the pan to the wire rack to cool completely. When completely cooled, wrap the cake if foil or heavy plastic wrap and let it sit for 1 day before serving

Beltane 2012 Recipes……

Merry Meet friends.  As I told you all in my last post…my writing is a bit more sporadic,  due to the fact I’m still trying to recover from the brain surgery I had on March 21.  I was looking thru a new cookbook though and decided to put a few recipes here that I have either made or want to try…and soon 🙂  

A lot of you are sending me wonderful comments, messages, cards and are asking how I’m doing.  I thank you all so so much for it!   Let me just say that this recovery is slow..but sure.  I saw my neuro docs today..had a recent catscan and everything looks ok.  The headaches are still with me, will be for awhile, some cognitive issues, balance and shakiness…but the headaches are more tolerable and that is great!  I’ll stay on the meds for a while, restrictions have not been lifted, but maybe by mid June I’ll at least be able to drive again 🙂  

The weather here in Ohio has really been beautiful…whether a cold day or warm day.  Spring is here in all her glory. Our grass is green and lush and has been cut a few times already.  The herbs that come back each year…are back and growing great….like lavender, lemon balm, catnip, thyme, chamomile, and mints.  Knock out roses are big and budding. Lilies are growing, dianthus, ajuga, honeysuckle, all bloomed.  Frogs, birds, squirrels, chipmunks and even raccoons are scurrying all over the place too.  I’ve been hearing an owl hooting several nights now but haven’t see him yet.  I’ve had some porch time, and nights with a fire going LOL! That is Spring in Ohio!  I Love it and Mother Earth coming to life makes me happy I’m still here to see it and I feel like I’m coming back to life too! 

Beltane is coming up fast.  Because of my illness I’ve decided to celebrate Beltane in a quiet way rather then the dancing, festive, party way it usually is celebrated.  I will have a fire for sure with my family here.  We will have some good food, some wine, and spend time together by the fire.   My ritual will be simple…taking in the Moon Goddess energies and just being still…listening…quiet…resting.  Asking for healing and energy to continue for myself and those I love who need it too.  It will be lovely.

Now for the recipes….foods for Beltane can consist of these things….Dairy, honey, oats, red fruits, herbal salads, red/pink wine, punch, large round oatmeal cakes, and sweets.

I found a few recipes to post here I thought you might like.  Don’t forget to do a search for Beltane recipes I posted last year too 🙂 

Raspberry Lemonade

2 –  12 oz cans frozen lemonade concentrate, thawed

2 – 10 oz pkgs frozen sweetened raspberries, partially thawed

2-4 Tbs sugar ..to taste

2 liters club soda, chilled

Ice

In a blender, combine lemonade, raspberries and sugar.  Cover and process until well blended.  Strain to remove seeds.  In a 4 1/2 quart pitcher or drink dispenser, combine the mixture, club soda and ice.  Mix well.  Serve!   Add mint leaves to poured glasses for some extra taste!

 

 

Peach Oatmeal Pancakes

1 2/3 cups pancake mix

1 cup quick cooking oats, uncooked

1/2 cup brown sugar, packed

1 Tb cinnamon

2 egg whites, beaten

1 Tb vanilla extract

1 peach, pitted, peeled and diced

1/2 cup chopped nuts

In a large bowl, combine pancake mix, oats, brown sugar and cinnamon; mix well.  Stir in remaining ingredients.  Pour batter by 1/4 cupfuls onto a hot buttered griddle.  Turn pancakes when bubbles form and start to pop; cook other side until golden.  Makes about one dozen pancakes. 

 

Tree Hugger Granola

4 cups long cooking oats, uncooked

1 cup chopped pecans

1 cup sliced almonds

1 cup shredded coconut (optional)

1/4 cup canola or sunflower oil

1/2 cup honey

1/2 cup brown sugar, packed

2 Tb rum or pineapple juice

2 tsp vanilla extract

1/2 tsp cinnamon

1/4 tsp salt

In a large bowl, combine oats, pecans, almonds and coconut, if using; toss to mix.  In a separate bowl, stir together remaining ingredients.  Pour oil mixture over oat mixture; stir until everything is evenly coated.  Spread out on a lightly greased 15″ x 10″ jelly roll pan.  Bake at 325* for about 25 mins, stirring every 5-10 mins, until golden.  Allow to cool on baking sheet. Store in an airtight container.  Makes about 7-8 cups.

*Great for a Beltane day walk 🙂

 

 

Spinach Strawberry Salad

1 1/2 lbs spinach, torn

3 cups strawberries, hulled and sliced

1 sweet onion, thinly sliced

1 cup chopped walnuts

Arrange spinach, strawberries, onions and nuts in a salad bowl.  Cover and refrigerate.  At serving time, drizzle the following Poppy Seed Salad dressing over the salad.  Toss and serve immediately.  Makes 6 servings.

Poppy Seed Dressing

3/4 cup sugar

1 tsp dry mustard

1 tsp salt

1/3 cup cider vinegar

2 tsps green onion, chopped

3/4 to 1 cup olive oil

1 1/2 Tb poppy seeds

In a blender, mix sugar, mustard, salt and vinegar until smooth.  Add onion and blend until smooth.  With blender running, add oil slowly.  Blend until thick.   Stir in poppy seed. 

 

 

Tomato-Basil Pasta

8 oz pkg linguine pasta, uncooked

3 tomatoes, chopped

1/3 cup fresh basil, thinly sliced

1 clove garlic, minced

1 Tb olive oil

1/2 tsp salt

1/4 tsp pepper

3/4 cup shredded parmesan cheese

Cook pasta as directed on package; drain.  Meanwhile, mix tomatoes, basil, garlic, oil, salt and pepper in a large bowl.  Add pasta and parmesan cheese; toss lightly.  Serve immediately.  Serves 4.

 

 

Lacy Oatmeal Cookies

1 stick butter, softened

6 Tb light brown sugar

6 Tb sugar

3/4 tsp vanilla extract

1 egg

3/4 cup all purpose flour

1/2 tsp salt

1/2 tsp baking soda

1 cup quick oatmeal

Cream butter and sugars.  Add in all the rest of the ingredients except oatmeal.  Blend well.  Now add oatmeal and blend well.

Drop by teaspoonful on cookie sheet.  Tope with raisins if you’d like (I like them without as they are very thin, sweet and buttery!). 

Bake at 350* for approx. 10 mins or until soft and golden brown.  Cool

This recipe was given to me by my husband’s Aunt Nikki when we got married.  To this day it is a favorite 🙂  Oh…I would at least double this recipe..they will go fast!!

Merry Meet my friends.  Hope that you are having Spring weather, that your world is blooming and greening and warming like mine is.  However the last 2 days it has felt more like Winter then Spring..sunny days but frosty cold mornings!  The frost did a bit of damage to some of my herbs and budding trees and bushes..but they will recover just fine I’m sure.  I love seeing the birds, chipmunks, squirrels enjoying the weather as well as the frogs and fish in our pond.  My sister got some great pics of the frogs sunning themselves on rocks next to our pond.  I love frogs!

 

 

 

As you who read my last post know, I had brain surgery and was quite ill and in the hospital for like 11 days.  I am taking baby steps towards healing.  My last catscan showed some improvement and no new bleeds.  However, I have pretty severe headaches still, shakiness and dizziness, and alot of fatigue to deal with.  I’m told to expect that for awhile.  Another side effect, a bit of trouble focusing…which is causing me trouble with my writing, reading, even watching tv and playing words with friends LOL.   Because of that..I have had a hard time writing here on my blog and posts may be a little more sporadic for a little while.  Please bear with me while I heal….and my muse comes back 🙂 

 

We are coming up fast on Beltane…one of my favorite Sabbats because of the sheer Joy of it.   It is a fire festival, a welcome to the return of the Sun…..we celebrate longer days, warmer days…the greening of Mother Earth.  Witches are out in their gardens…tenderly planting, watering, weeding, designing and enjoying the feel of the warm earth, the Sun on our backs, the scent of the flowers and herbs and our bare feet in the green grass and rich brown dirt.   Meals are taken outdoors on patios and balconies.   We want to eat lighter and healthier, take walks, be more active.  Personally, one of my favorite things about the warm weather..is having my morning coffee on my front porch while I watch the Sunrise…and in the evening, again on the porch with a glass of wine and watch the Moonrise.  Even if you live in the city, in an apartment or condo…you can have pots of herbs and flowers to tend, to touch, to care for.  We dress lighter and in brighter colors, don our garden hats or gypsy scarves (especially for me this year with my shorn head LOL).  We want to be around water too..a pond, a pool, a lake, an ocean…even a kiddie pool is fun if thats all thats available!  I know I will have a blast with my grandbabies with their kiddie pool this Summer 🙂  

 

 

 Beltane!……  It’s about joy, love and lust, yes that kind of lust but also Lust for Life!  After making it thru the long, cold, dark Winter…we are again free to be outdoors, to enjoy nature, warmth, Sun and longer days.  Dance around a fire, feast, frolic with the faeries as they are very much part of Beltane.  Erect a maypole and invite your family and friends over to wind the ribbons and dance around it.  Set up a fairy garden and don’t forget to leave them an offering of a shiny crystal or stone or some honey and bread….. ask them to aid you in your garden.Rejoice with the God and Goddess in their Great Rite….laugh, be happy!! 

 

 

Another thing I really want to do this year…is to make up some May Day baskets for my friends and family…I love this idea of using a canning jar or even just a tin can…fill it with beautiful flowers and leave it as a surprise on the door….what a lovely gift! 

For me…this year especially…Beltane will be a most  joyous occasion..simply for the fact that I am still here…with my family and loved ones. I am so grateful for that.    I must say..Summer is not my favorite time of year….I love it until it gets too hot.  I don’t like being hot LOL!  However,  early Summer is just a beautiful time of year with it’s warm days and cool, comfortable nights.  I intend to enjoy every minute of it…and Beltane is a great way to start off a beautiful Summer Season!

To Tell You Where I’ve Been………

Merry Meet my dear readers.  It has been a bit of time now since I’ve written here on my blog….and well….there is a good reason.  I debated with myself for a few days on whether to even write about this….but decided that as I learned a few lessons in this process…..that I would share my experience.

On Irish Day, March 17, after having a terrible headache for over 2 weeks, and with the insistence of my sister and a good friend, I had that friend take me to a local hospital to get checked out..something was not right with me and I could feel it.  Very quickly, I had a catscan and discovered that I was indeed a very sick lady.   I had two brain bleeds…one older and a brand new one.  It became a dire situation very fast.  I was ambulanced immediately to another hospital more equipped to handle my situation.  My family rushed in to be with me and we were all very scared..not knowing why this had happened or what the outcome was going to be.   After more catscans, MRI’s, IV meds, being in the ICU for a couple of days..the bleeding had not stopped.  I was really sick with nausea and such a severe headache that pain medicine didn’t stop it.    Then….I had brain surgery on wed the 21st.  Multiple burr holes were dug into my skull to relieve the pressure and allow the blood to drain out. My head was shaved down, drains applied and 30 some staples applied to close everything back up.  The next few days were a bit of a blur..still so sick, sleeping alot, and hoping for relief to kick in soon.  Eventually the drains were removed…catscans started showing improvement….I was moved out of ICU to a regular room and I started working towards going home.   I finally got home late tuesday night the 26th. 

My ordeal is not over.  I have some cognitive deficits, my eyesight seems to be affected a bit, still have a headache though much more tolerable.  There will be appts with docs who are trying to figure out what caused the bleeds in the first place..to prevent them from happening again.  The neuro docs will be involved in my life for some time.  I have alot of restrictions…. no driving, no bending over, no lifting, over exertion, no housecleaning,  must get more sleep, meds I have to take and others I can no longer take.  Whew…..it’s alot to take in and alot to deal with…….

But…….  it’s NOT more then I can handle.  I am so so grateful to be alive, to be with my family and friends, to see that Spring has sprung while I was gone, to hug my grandkids, see my daughter’s smiles, my husband’s worry,  pet my cats, sit in my favorite chair in my own jammies, to watch the Sunrise and the Moonrise.   I had not seen the Moon for 12 days….the night I got home…my husband helped me to take a long soaking bath.  Right over our tub we have a skylight.  As I laid back to just soak my achy, bruised body….the Crescent moon was shining right thru that skylight onto me…filling me with a deep sense of healing, peace, love and strength.  It was amazing and I was mesmerized by how my Goddess reminded me She was still with me…always. 

Another lesson I learned…..was how strong, caring and wonderful my facebook friends are.  The outpouring of love, healing energy and concern was incredible.  I was too sick to really “be” on facebook much….but I read what I could…so often crying at the pure magick of it…and the feeling of love I was receiving…it was humbling and so so touching.  I believe it was that incredible love that has kept me here as well.  Thank you so so much my friends.

I also learned…again….that my husband, daughters, son-in-law, sisters, brother, and some close friends….always are there for each other as well.  No matter what the crisis…someone steps in to help….not all my family has these qualities….but enough of them do 🙂  Thank you ..I love you all.

I think the last lesson I need to learn….is that I need to learn to care for myself as much as I care for others.  I ignored alot of signs from my body that something was wrong.  It’s not normal to have a terrible headache for 2 weeks or more….but I just was too busy to take the time to pay attention.  I don’t sleep enough, don’t take the time to pamper myself, don’t eat right always, put off health checks and doc appts,  and put others first always.  Well….I found out the hard way….I could be gone….and then I’d be no help to anyone..and those I love the most would not have me anymore either.  So that is probably the hardest lesson to learn..but the one that is going to have to take priority.  I have to take baby steps to getting better. It is going to be a bit of a process.  But I’m going to learn to care for myself too..I have too.  I have so much to live for….and I want to live a wonderful, healthy, full of life….Life!  The Goddess has Blessed me with another chance…I intend to take it…with great Gusto!!

Ostara Recipes 2012………

Merry Meet everyone!  As I’m sitting by the fire on a cold Saturn day, my heart is heavy for the victims of the storms yesterday that swept thru the Midwest…in some cases completely wiping out small towns, like in Henrysville and Marysville, Indiana..not that far from me.  Loss of life, homes, towns…very sad to see.  May Goddess bless everyone affected by them.  Blessed Be. 

Today was actually a beautiful day here.  It’s cold, but the Sun was shining and it still looked like a Spring day! The feeders and pond is busy with birds and believe it or not, we have frogs sunning on the rocks on our pond as well already! But we are expecting snow by tomorrow evening into monday morning.  LOL …that’s Ohio weather for you!    I have been working a few days on gathering recipes for what I’d like to make for Ostara,  and thought you all would like to see them too.  I have already posted my personal Ostara recipes in my posts here the last 2 years…..so for this post……I perused my cookbooks and came up with a few I thought sounded delicious.   I look forward to making them myself!   

So here goes……  We often have a brunch for Ostara or Easter instead of lunch or dinner.  It’s such a nice change of pace from the big ham dinners we’ve always had in the past.  So keeping that in mind….I found a few wonderful brunchy meal ideas 🙂

Orange Apricot Juice

 1 (12 ounce) can apricot nectar, chilled

1 1/2 cups orange juice, chilled

2 tablespoons lemon juice

In a pitcher, combine apricot nectar, orange juice, and lemon juice. Serve chilled

*I would triple this at least!!  

 

Gingered Kiwi Fruit

 3 TB sugar

3 TB water

2 T crystallized ginger, minced

¼ tsp vanilla extract

4 kiwi fuit, peeled and sliced

2 oranges, peeled and sliced

 In a small saucepan over medium-high heat, combine sugar, water and ginger.  Bring to a boil.  Stirring constantly, boil until mixture reaches a light syrup consistency, about 3 mins.  Remove from heat and stir in vanilla.  Cool slightly.  In a dessert dish, gently stir fruit slices and ginger syrup until well mixed.  Cover and refrigerate until well chilled, about 2 hours.  Serves 4

*Again would probably double or triple this! 🙂 

 

Fresh Asparagus Omelet

 1 TB butter

1 TB olive oil

8 stalks asparagus, cut into ½ inch pieces

¼ onion, chopped

6 eggs, beaten

¼ cup milk

Salt and pepper to taste

½ cup shredded swiss cheese

In a non-stick skillet, heat butter and oil over medium heat.  Add asparagus and onion; cook for 5 mins, or until tender.  In a bowl, combine eggs, milk, salt and pepper.  Beat egg mixture with a fork just until bubbles begin to appear; pour over asparagus mixture.  Cook until eggs set on top; lift edges with a spatula to allow uncooked eggs to run under cooked eggs.  When eggs are set, top with cheese.  Cut into wedges.  Serves 2 – 4.

*Why not go a step further and just set up an omelet bar.  Just have lots of fixings and make them to order!  What a fun thing to do!  However, I love Spring asparagus and think this recipe sounds fantastic!

Honey Sunflower Bread

*Makes 2 loaves

 2 cups water

1 cup rolled oats

½ cup honey

1 TB butter

2 tsps salt

1 cup roasted sunflower kernels

1 (1/4oz) package active dry yeast

½ cup warm water

2 ½ cups whole-wheat flour

2 cups white flour

Bring the water to a boil and and stir in the oats.  Set aside for 1 hour.  Spray two 9 x 5 x 3 inch loaf pans with vegetable oil spray. 

Add the honey, butter, salt and sunflower seeds to oat mixture and stir well.

Dissolve the yeast in the warm water and allow to stand for 5 minutes.  Stir the yeast mixture into the oat mixture.  Blend in both flours, stirring until the dough pulls cleanly away from the sides of the bowl.  Form the dough into a ball and place in a greased bowl, turning to coat.  Cover loosely with plastic  wrap and let rise in a warm place for 1 hour or until doubled in size.  Punch down the dough.  Knead until smooth and elastic.  Divide into two loaves and place in the prepared pans.  Cover and let rise again until doubled in size. 

Preheat the oven to 350*.  Bake until golden brown, about 45-50 mins.  It if appears that breat is browning too quickly, cover with foil the last 10-15 mins of baking time.  Remove bread from pans and cool on a wire rack. 

*I think this would make delicious french toast too 🙂 

 

Fruit and Spinach Salad

 1 pound fresh spinach, torn

4 cups strawberries, sliced

1 (11 ounce) can mandarin oranges, drained   (I would use Clementine fresh oranges here!) 

1 star fruit, sliced

GINGER SALAD DRESSING:

1/3 cup lemon juice

2 tablespoons olive or canola oil

2 tablespoons sugar

3/4 teaspoon ground ginger

2 teaspoons grated lemon peel

Arrange spinach and fruit on salad plates. In a jar with a tight-fitting lid, combine the dressing ingredients; shake well. Drizzle over salads; serve immediately.

 

 

 

Dilly Egg Salad

 8 eggs

2 TB mayo

2 TB Dijon mustard

1 tsp dill weed

½ tsp paprika

1/3 cup red onion, minced

Salt and pepper to taste.

 Place eggs in a large saucepan, cover in cold water and bring to a boil.  Boil for 10-12 mins, remove from heat.  Run eggs under cold water until cool.  Peel and Chop.

Place eggs and remaining ingredients in a large bowl; mix well.  Serve on pumpernickel bread or on a bed of lettuce.  Makes 4 servings. 

*I would use MORE mayo and dijon 🙂

Maple Glazed Salmon

1/4 cup maple syrup  (even better if you use the REAL maple syrup 🙂

2 tablespoons soy sauce

1 clove garlic, minced

1/4 teaspoon garlic salt

1/8 teaspoon ground black pepper

1 pound salmon

In a small bowl, mix the maple syrup, soy sauce, garlic, garlic salt, and pepper.

Place salmon in a shallow glass baking dish, and coat with the maple syrup mixture. Cover the dish, and marinate salmon in the refrigerator 30 minutes, turning once.

Preheat oven to 400*  Place the baking dish in the preheated oven, and bake salmon uncovered 20 minutes, or until easily flaked with a fork.

 

Carrot Pecan Wild Rice

1 1/2 cups wild rice
2 carrots sliced  into 1/2-inch rounds
1/4 cup raisins
1/4 cup pecans
The zest and juice from 1 orange
1/4 cup chopped parsley
4 tablespoons  melted butter
Salt and pepper to taste

Add wild rice to a sauce pot with about 4 1/2 cups of water, and cover.  Bring the rice to a boil and then simmer for about 40 minutes according to the package directions.

While the rice is cooking, slice carrots into 1/2-inch rounds and then simmer for about 5 to 7 minutes until they are tender.  In a large bowl combine raisins, pecans, the zest and juice from an orange, chopped parsley, melted butter and salt and pepper, to taste.  To the large bowl combine the wild rice and carrots. Mix.  Makes 8 servings.

 

 

Coconut Carrot Cake

*I adore carrot cake….and this is a spicy moist one..delish!!

2 cups all-purpose flour

2 teaspoons baking powder

1 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon allspice

4 eggs

2 cups white sugar

2 teaspoons vanilla extract

1 1/4 cups vegetable oil

2 cups grated carrots

1 (20 ounce) can crushed pineapple, drained

1/2 cup sweetened flaked coconut

1 cup chopped walnuts

1 cup raisins

Preheat the oven to 350 degrees F (175 degrees C). Coat a 10x15x2 inch baking dish or 10 inch Bundt pan with cooking spray.  In a medium bowl, stir together the flour, baking powder, baking soda, salt, cinnamon and nutmeg. Set aside.

 In a separate larger bowl, mix together the eggs, sugar and vanilla by hand. Stir in the oil; the mixture should resemble pudding. Gradually stir in the dry ingredients, then fold in the carrots, pineapple coconut, walnuts and raisins. Pour the batter into the prepared pan, and spread evenly.

Bake for 55 to 60 minutes in the preheated oven, or until a small knife inserted into the cake comes out clean.

 

Ostara Lemon Cake

 1 box lemon cake mix

1 (3.4oz) package instant lemon pudding mix

4 eggs

¾ cup oil

¾ cup water

Glaze:

1 TB water

2 TBs melted butter

1/3 cup lemon juice

2 cups powdered sugar

Preheat the oven to 350*.  Grease a 9 x13 baking pan.  Prepare the cake mix using the pudding mix, eggs, oil and water.  Bake in the prepared pan for 35-45 mins, until a toothpick inserted in the center comes out clean.

While the cake is baking, prepare the glaze, mixing together all the ingredients until smooth.  Pour the glaze over the warm cake and serve.  Makes 10-12 servings

*I think this simple and lemony yellow cake would just look lovely on your Ostara table!!

Please let me know if you try any of these..I always love hearing when someone tries and likes (or not) them 🙂  I’ll do the same.  Sure wishing I had the fixins for that carrot cake right now!  🙂   Remember, its the start of Spring…fresh light foods are so much better then heavy, saucy, salty foods.  You’ll feel so much better after having  healthier foods..and then of course..you can have some decadent dessert!! LOL.

The Wheel turns to Ostara 2012……..

Merry Meet dear friends.  I hope you’ve all had a wonderful weekend.  I know I did.  We have enjoyed a few days of seeing the Sun shining!  It’s been wonderful after several gloomy ones.   Though it’s cold out, the Sun makes me feel all warm inside.   I’m sitting by a warm fire, stocking feet up on an ottoman, laptop on lap and glass of Baileys by my side.  I’m listening to my Ipod, hubby is snoozing in his chair next to me, and my daughter went on to her room for the night.  It’s peaceful and quiet and my mind turned to the next Sabbat…Ostara…so I decided to write a post. 

First, feel free to do a search here on my blog for Ostara…that will bring up all the previous posts I’ve written over the last 2 years.  That way you can find the correspondences, recipes, pics of altars, rituals etc again.  I don’t want to keep repeating myself every time I write on the same subject 🙂  As we all know, Ostara is the first day of Spring!  The days are longer and starting to get warmer.  Depending on where you live, you may see grass starting to green, spring flowers starting to shoot up from the ground, critters and birds getting more active, and people getting out a bit more, shedding their heavy winter coats.  Garden Centers are filling up with seed packets, spring bulbs and flowers, patio pots, and all the goodies us garden Witches love. The stores are filling up with Easter candy, stuffed rabbits, and Spring clothing.  Everybody’s mood gets just a bit lighter and a bit more energetic..a Spring in their step so to speak LOL.

Now here in Ohio…March can often have us with snow on the ground still.  But sometimes, we see balmy weather and an early Spring too.  Either way, I can still feel Spring coming in my soul….and it feels great!  As much as I love Winter, Spring is a wonderful time of year too.  My mind turns to cooking lighter, planning out my gardens and herb pots, finishing up any Spring cleaning that didn’t get done (I always save carpet cleaning and window cleaning for this time of year) and planning some outdoor fun.  Taking nature walks this time of year is so wonderful!  While on a walk, pay attention to what you see around you.  The trees may be budding, spring ground cover blooming, mushrooms may be growing and you might see some baby critters too.  Take a big old sniff of the air and the dirt….you can smell Mother Earth waking up, stretching, blooming…..ahhhhhh!  If it’s really warm, take off your shoes and walk in the grass and dirt…or sit up against a tree, Sun shining on your face and feel the Earth’s vibrations..you can literally feel Her humming….vibrating….coming alive!  Let the energy surge thru you….feel the quickening in your heart and soul.  It’s magick!!

 

Right around Ostara is when I start picking up the things I need to start my herb seedlings.  I buy the organic pots, organic soil and good seeds.  I like to get them planted and growing right around the first day of Spring.  I bless them with a magickal spell (you’ll find it in last years post here) and keep a close eye on them for the next 6 weeks.  I love doing that..watching them sprout and grow.  Some seeds do better then others…but I try every year to see how they do.  Then right around Mother’s day…into the ground and/or pots they go!  I love the whole process..it makes me happy! 

My family celebrates Easter as well with members of our extended family who are Christian.  So we do the family ham dinner, dye eggs and hide them for the grandkids, dress up in pastels etc. There are bunnies and tulips and colored eggs on my pastel- colored altars too.  Yes, Easter is a nod to our Ostara, though Pagans don’t celebrate the resurrection of Jesus Christ….a Christian belief.   Ostara…… is more about recognizing the lengthening days, the awakening of our Mother Earth, the work to come in our gardens, and the long dark spell of Winter being over! It is the turning of the Wheel…then end of one season and the start of the next.  I still like to have beautiful meal of good food with my family for Ostara too.  Being outdoors is a must and I like to do a ritual to welcome Persephone back from the Underworld..bringing Spring with her!   As a Mother, I can imagine the joy Demeter must feel everytime her beloved daughter comes back.  Think of that joy and find it yourself in your celebration of this beautiful Sabbat. 

In the next week or two..I’ll be posting a few recipes, pics of my altar, and I’ll post pics of Mother Earth coming to life around me.  Don’t forget if you want to…to look for my posts from last year and the year before for MORE recipes and more information.  We have about a month until Ostara…I’m sure we will have more Winter weather in the meantime.  But now….you can start thinking about what you’ll be doing when this next month or so is over and Spring has arrived.  A wonderful way to while away the cold Winter days that are left 🙂  It won’t be long til you’ll see this……:)

Blessed Imbolc 2012……….

Merry Meet again friends.  Hope all is well with all of you!  Whew….I don’t know about you but I’m tired and energized at the same time!  I have spent a couple weeks really deep cleaning my house..”Spring” cleaning as some say….to get my home ready for Imbolc.  I have cleaned high and low, ceilings to floor, linens and curtains washed, ceiling fans cleaned, cobwebs and dust bunnies swept away.  Closets, drawers, and cupboards are organized and de-cluttered.  Furniture swept and cushions flipped and fluffed. Bathrooms scrubbed, floors swept and mopped……  Everything has been cleaned!  My house looks great…the energy feels great and I’m ready for Imbolc.  That is why I’m both tired and energized.  I’m tired from the work….but so energized in what I’ve accomplished and how great my house feels!

Now…there is still a couple things that need done…and they will get done..just not by Thursday. LOL.   Carpets are going to be cleaned but not til March or so..after our chance of snow is gone.  My windows need cleaned ..the high ones we don’t do ourselves..and again, that will be done in the Spring.  Now…tomorrow, I will be smudging the house in every corner.  Placing my protection sigils all around the house, fresh salt in all the corners etc. The weather is going to be very Spring-like..near 60*!  I’m going to take advantage of that.  Opening windows to let that fresh air come in and the stale air out.  Really, we have had an amazingly mild Winter this year.  So many warm days and very little snow.   I am still hoping for a good snow!  The kind you get snowed in, fire going, jammies on and hot drink in hand, can’t go anywhere snow.  Now that all my housework is done, I could just relax and read and work on my BOS and things I have a hard time finding time for 🙂  But the mild Winter has been very nice as well.  As a matter of fact, I plan on going for a walk at our local nature preserve and enjoying that warm weather! There is a rescue raptor center there..and I love to go and visit the owls that reside there permanently.  I adore Owls and need a fix!

 I got my altar done today…thought you would like to see the pictures.

I went with pretty much a red and white theme, with a bit of gold and green thrown in.  The red and white is traditional colors for the Goddess Brighid.  This year, I’m using her colors to honor her. The green, shown in the live greens from my yard, and the green celtic knots on the votive holders..represent both her mantle of green, the seasonal greens that will be burned in a fire on Imbolc, and of course the green celtic knots represent the fact that she is Celtic. I chose  a silver candle for the Goddess and a gold one for the God.

In the greens I put some red feathery stalks and will add red and white fresh flowers by thursday.  I have all my usual altar reps for the elements, my tools etc.  Ok…the Goddess statue is my new gorgeous Hecate statue.  I do not have a Brighid statue so Hecate is standing in for her.  Brighid is a triple Goddess as is Hecate the crone aspect of a triple Goddess.  They both mean so much to me that I don’t think Brighid will mind 🙂  Isn’t she gorgeous? I can’t stop looking at her!  My goddess is standing on a favorite book of poetry..a very old, fragile book of Tennyson poems..as Brighid was the Goddess of poets.  There is a bit of silver in my pendants as well to represent her smithcrafting.   Blessing oil for my re-dedication, some ribbons I’ll use for cord magick, my 7 candles…red and white..in a circle for another ritual I’ll do.   Crystals, more candles, and my cakes and ale will round it out.  I really like it! It feels good to me 🙂 

No matter how much or how little you do to get ready for Imbolc, do something to recognize the day.  If all you do is light a candle, take a walk, open a window, have a quiet meal with your family..whatever you please is just fine.  But honor the day.  So many people are not overly fond of Winter.  Imbolc, lets us know that Spring is coming and it will be here before we know it!  It’s a promise from the Goddess, Mother Earth, the Sun God.  Enjoy the Sabbat…rest and relax for the rest of the Winter and I wish you all a Blessed Imbolc to you and your loved ones.  May the Goddess Brighid give you Peace, Love and Joy!

Countdown to Imbolc 2012…….

Merry Meet on this beautiful Sun day.  Hope your New Year is going well so far.  I have been sick with a virus that has had me down for some time now but I’m pulling up my bootstraps and telling myself I’m OVER it now 🙂  I do feel a bit better today and hope it continues.  As I’m having a quiet day I decided to post on my blog…about Imbolc….as I was making notes and lists to get ready for this wonderful Sabbat.  Imbolc has always been special to me because it was the first Sabbat that I celebrated.  It always feels hopeful and full of magick to me. 

As I am writing this, I’m sitting in my chair with the window cracked open, allowing the cool air to come in and cleanse out my house a bit.  Though it’s in the low 40’s here, the Sun is beautiful and warm and it feels a bit like a Spring day.  That’s what Imbolc is all about..the return of the Spring, the warmth, the Sun….Mother Earth re-awakening!  We have had a rare Winter so far here in Ohio.  Only one snow that amounted to anything, lots of days above normal temps and it’s been delightful!  But though I’m thinking about Spring already, we have much more Winter to go I’m quite sure 🙂 

 Imbolc, known also as Imbolg, Candlemas, the Festival of Brighid, and the Feast of Lights. The word Imbolc means “in the belly,” or in the womb of Mother Earth, as well as “in milk,” which refers to ewes coming into milk for the first lambs of the season. This Sabbat marks the return of spring, even as winter continues its reign. Imbolc is February 2nd and is of course, in modern times, also known as Groundhog’s Day.

Imbolc, for me,  is a time of cleansing and purification. It’s all about Spring Cleaning!  It is time to throw out the old and bring in the new. This not only means the “stuff and clutter” in your home, but also your old thoughts, anger, hurt feelings etc. To Sweep out negatitive and stagnant Air and bring in fresh, clean positive Air.   To re-new my home and myself. After a thorough Spring Cleaning on my home, I Cleanse and Bless my home and those who dwell here, and cleanse my body and my soul as well.   Imbolc is when I re-dedicate myself to my path every year.  Though it’s not necessary to do, it re-energizes and re-connects me to my path, my Goddess, my way of life.  

The customs of Imbolc include ritual “spring cleaning” of the house, to banish the last of winter and hasten the coming of warm, sunny days.  Some things I do while cleaning…..I  use lavender and rosemary in a pot of boiling water to wash floors and walls, vinegar and mugwort for windows and mirrors. Burn sage to cleanse the psychic energies, and replace old protection and prosperity charms. I wash all my curtains and linens and give them a good spritz with lavender water before re-hanging them.  I clean out drawers, closets, cupboards. Sweep high and low.  Replace burnt out light bulbs, anything that’s broken, throw out that is which is no longer of use or pleasure.  The house will smell and feel amazing when you’re done!  Oh, I like to replace all my old candles that may not be finished yet…just to have a fresh start! 

I also spend some time on myself.  Taking a ritual bath scented with your favorite herbs/oils or sea salt is always cleansing and renewing.  As you soak, meditate to clear your mind and heart of any thoughts or emotions that no longer serve you. This is all to “start a-new” in mind, body, spirit and home. Anoint your chakra points with Blessing oil after and spend some time meditating and focusing inward on yourself.  Let go what needs to go and open yourself to new possibilities, Joy, Peace and Love only.  Let the negative go and the positive take over.  You will feel so great afterwards.

On Imbolc Night, in ancient times, The Goddess Brighid was honored in her Maiden form.  One way to honor her is this.  Home hearth fires are put out and re-lit, and a besom is placed by the front door to symbolize sweeping out the old and welcoming the new. Candles are lit and placed in each room of the house to honor the re-birth of the Sun. Just before sunset, turn off all the lights in the house. Carrying  a single white burning candle,  to represent Brighid, knock three times on the front door and invite the Goddess to enter, asking that she bestow health, success, abundance, and love upon everyone in the house. Then slowly begin turning on the lights, moving room to room, until every light in the house is on.  This is really magickal to me..symbolizes the Darkness of Winter changing to the Light of Spring.  If you have made a Brighid cross, have it on your altar or hanging near your front door or fireplace to represent Her as well.

To aid you in your house cleansing, here is a ritual I love to do after all the Cleaning is done….

Imbolc House Cleansing Ritual

-Light a smudge stick and walk around the rooms of your house to replace old protection and prosperity. I smudge around all my windows and door and throw them open to allow in the fresh, cold Air!  You can also go around with a representative of each element…salt, incense or sage, a lit candle etc….or you can use a Blessing oil and anoint your doors and windowsills with a pentagram or sigil of protection.  While you are doing so, say something like:

“May the goddess bless this home

make it safe and secure

so that nothing but love and joy

shall enter here.

When you are finished with every room, close the windows, step back and take a deep breath.  Feels good doesn’t it? I usually do this House Blessing…then light all the candles and turn off lights and welcome in Brighid as written above.  Then I sit with a nice glass of Bailey’s or Wine and enjoy the feel of my Clean, Cleansed and Blessed home!  I’m ready to deal with the rest of Winter and my heart knows that Spring will be here soon!

I will post more about my altar and my Imbolc celebration in the coming days. If you haven’t already started thinking about this beautiful Sabbat, then do. There is alot of work involved with this one. The clearing out of the old is not for the faint of heart! LOL Be brutal in both your home and yourself! Really clear out the stuff that needs to go. You will feel so much better about your home and you will feel lighter and happier with yourself as well. Spring is coming and I know that makes many of your heart’s soar!! Start it out with a clean, uncluttered great smelling home and a clean slate full of positivity, lightness and joy for yourself! The Magick of Imbolc is upon us!

Oh, tonight is the Full Wolf or Cold Moon.  Her energy is amazing as I visited with Her last night and will again tonight.  Doing some healing work for myself and some friends of mine, making Moon water, cleansing and energizing some new crystals, tools etc.  Blessed Full Wolf Moon to you all!  Make the Most of your time with Her!

Litha Recipes……

Merry Meet friends!  I hope you are all having a wonderful Spring so far.  Our Spring has been on of the rainiest ones I can remember in a long time.  Cool weather and rain and gloom much more then sunshine this year.  But the last 3 days have been sunny, summer-like and wonderful!  I have soaked it up as best I can.  Its the kind of weather you want to sit on the porch, work in your garden, take a walk, go get ice cream, read a book under a shady tree, watch the sun rise with a cup of coffee, and watch it set with a glass of wine.  I love this weather. Tonight though, the storms came back and the next few days it’s going to rain again.

I don’t really mind the rain as I’m going to be very busy.  My grandson, Charlie Matthew, is going to be born sometime tomorrow!  My daughter will be induced early in the morning..doc says it’s time and so does Kate.  I can not wait to hold the little guy in my arms, see what he looks like, pray that he is healthy, and welcome him into our family.  We feel so blessed and we all can’t wait for Lily to meet her new little brother.  I pray to the Goddess for an easy delivery and a healthy, bouncing baby boy.  We are all so excited!

I was thinking about Summer and decided to go ahead and post my recipes for Litha tonight for you.  Remember in my Countdown to Litha post..I talked about the correspondences for food for the Solstice.  Fresh fruits…especially citrus and in-season fruits, all vegetables, summer squash, honey, fresh herbs like thyme and lavender, pumpernickel bread, ale and mead were all on the list of yummy foods that represent Litha.  I found and have some wonderful recipes ..hope you like them!

Stawberry Lemonade

*1 pint small strawberries, hulled and halved

*A few sprigs fresh mint

*1/3 to 1/2 cup sugar

*6 cups water

*12 lemons, juiced

Directions

Add the berries and mint to a glass pitcher and smoosh (LOL yes that is a term ) with a wooden spoon.

In a  saucepan add the sugar, to taste, and 2/3 cup of water. Cook over medium
heat until the sugar dissolves. Pour over the strawberries.

Stir in the lemon juice and fill the pitcher with the remaining water. Chill or pour over ice and serve.

Mushroom Appetizers

 *1 jar mushroom slices

*½ cup Hellmans mayo

*1/3 cup shredded parmesan cheese

*Small can French fried onions

*Cocktail sized pumpernickel bread

*Dash of salt

Mix ingredients well except for bread.  Spread mix on bread slices.

Bake at 350* until Mixture is brown and bubbly….

Orange-Spinach Salad

*1 tablespoon orange marmalade

*1 lemon

*1/4 extra-virgin olive oil

*Salt and freshly ground black pepper

*2 to 3 cups fresh spinach

*2 to 3 cups arugula

*1 orange, peeled and thinly sliced into discs

*1/2 small red onion, very thinly sliced

*1/4 cup chopped hazelnuts, toasted

Directions

In the bottom of a shallow salad bowl, combine the marmalade with the juice of 1 lemon then whisk in extra-virgin olive oil and season with salt and pepper. Toss greens with
oranges and onions and season with salt and pepper. Top with hazelnuts.

Autumn’s Greek Pasta Salad

*1 lb bag tri-colored pasta or pasta of choice, cooked, drained and cold

*1 cucumber, peeled, seeded and cut into small cubes

*1 -2 tomatoes..cut into small cube

*1/2 cup shredded parmesan cheese

*1/2 – 1 cup crumbled or cubed feta cheese

*1/2 cup sliced black olives

*salt and pepper to taste

*a bottle of italian or greek dressing or homemade if you have it.

Mix all ingredients well.  You may have to add more dressing after it has chilled as pasta will absorb it.

*this is a light and delicous salad..a favorite at our house!

Fresh Fruit Salad with Honey Yogurt Dressing

*2 cups plain yogurt

*2 tablespoons good honey

*1/2 teaspoon pure vanilla extract

*Seeds scraped from 1/2 vanilla bean, optional

*1/2 orange, juiced

*1 banana, sliced

*1/2 pint fresh blueberries

*1/2 pint fresh raspberries

*1 pint fresh strawberries, hulled and cut in half

*1 bunch seedless green grapes, halved

Directions

Combine the yogurt, honey, vanilla extract, and vanilla bean seeds in a bowl and set aside

Combine the orange juice and banana slices in a separate large bowl. Add the berries and grapes and gently mix the fruit mixture together.

Spoon the fruit into serving bowls and top with the yogurt.

Glazed Carrots and Sugar Snap Peas

*2 pounds carrots, peeled and coarsely grated

*1 pound sugar snap peas, ends trimmed and cut into three strips lengthwise

*2 tablespoons butter

*3 tablespoons honey

*2 tablespoons grated lemon zest

*1 tablespoon lemon juice

*salt and pepper to taste

Directions

In a large pot of boiling, salted water cook carrots 1 minute, add peas and cook another minute. Drain under cold running water to stop cooking. In a large skillet heat butter with honey over medium high heat until honey is melted and runny. Stir in1 tablespoon lemon zest and lemon juice. Add carrots and peas and cook until they appear glazed about 3 minutes. Add salt and pepper to taste. Serve sprinkled with remaining lemon
zest.

Balsamic Glazed Butternut Squash

*1 (20-ounce) package peeled cubed butternut squash

*2 tablespoons honey

*1/4 cup balsamic vinegar

*1 tablespoon lemon pepper seasoning

*3 tablespoons olive oil

Directions

Preheat oven to 400 degrees F.

In a large bowl combine all ingredients and mix to coat the squash.

Place squash on a nonstick baking sheet or a baking sheet lined with foil. Bake until
the squash is tender and brown about 30 to 35 minutes making sure to turn the squash after 15 minutes.

 

 

Grilled Balsamic Chicken Breasts

*1 pound chicken breasts

Marinade:

*1/2 cup balsamic vinegar

*1/4 cup olive oil

*2 tablespoons fresh rosemary

*1 teaspoon dried thyme

*5 cloves roasted garlic

*1/2 teaspoon freshly ground black pepper

Directions

Wash the chicken and pat dry; cut diagonal slits across the chicken breast (about 1/4-inch thick), this allows the marinade to penetrate the meat; place into a resealable plastic bag.

Combine all marinade ingredients in the bowl of a food processor and pulse until smooth. Pour the marinade into the plastic bag with the chicken and seal, removing as much air as possible. Let sit in the fridge 1 hour.

Preheat the grill to the medium setting; spray the grill grates with cooking spray (while standing back!). Put the chicken on the grill; cook for roughly 15 to 20 minutes, flipping once; chicken is done when juices run clear.

 

Honey-Lavender Biscotti Recipe

*2 1/4 cups all-purpose flour

*1 teaspoon baking powder

*1/2 teaspoon baking soda

*1/4 teaspoon salt

*2/3 cup granulated sugar

*3 large eggs

*3 tablespoons honey

*1/2 teaspoon pure vanilla extract

*2 tablespoons orange zest

*1 tablespoon dried lavender blossoms
Directions:

Preheat oven to 350 degrees F. Adjust oven rack to the middle position. Lightly grease
three baking sheets  or line with parchment paper.

In a medium bowl, sift flour, baking powder, baking soda, and salt together; set aside.

In a large bowl, whisk sugar and eggs to a light lemon color; stir in honey, vanilla extract, orange zest, and lavender blossoms. Sprinkle dry ingredients over the egg mixture; fold in until the dough is just combined.

To shape the dough into a log, lightly sprinkle flour on the work surface, on top of the dough, and on your hands. Use just enough flour to form the logs and to prevent sticking; you don’t want the logs to be covered with flour. Divide dough into six equal pieces. With your hands, pat and shape each piece into a loaf approximately 3 inches wide, 7 inches long, and 3/4-inch high. Place two rolls onto each prepared baking sheet with 3 to 4 inches of space between them.

Bake 25 minutes or until dough pops back up when lightly pressed with a finger.
(After dough has baked 10 minutes, reverse cookie sheets from front to back and
move from the top rack to the bottom one. Repeat this again after another 10
minutes). You can’t judge the cooking by the color. The biscotti shouldn’t
change color during the second baking, so poke them to tell if they’re done.
They should feel dry and offer some resistance. Remove from oven and cool 10
minutes on a wire rack.

Reduce oven to 275 degrees F. Using a long serrated knife, cut logs diagonally into
1/2-inch thick slices. Turn the slices over, onto their sides; return slices, on baking sheets, to oven. Bake another 15 minutes. NOTE: Do not crowd the biscotti slices on the baking sheet for their second baking as they need the hot air to circulate to enable them to crisp up evenly. Remember biscotti will continue to crisp up, as they cool, so do not be tempted to over bake. Remove from oven and cool completely on wire racks. Store biscotti in an airtight container. They will keep well for a few weeks.

Yields about 54 biscotti.

*These are not quite as complicated as they sound..and worth the effort 🙂 You’ll love them!

All these recipes are so summery, fresh, some are very  healthy and full of good stuff from the garden and all the foods suggested for Litha.  Now obviously you may not fix all of these THAT day but you will want to make all of them at different times over the Summer.  The pasta salad is great with burgers and corn on the cob.  The Summer squash great with the chicken.  Have your girlfriends over for strawberry lemonade, mini tea sandwiches, fruit salad and honey-lavender biscotti.  Add grilled chicken to the orange -spinach salad and you have a meal right there 🙂  Yummy!!  Make your Summer Solstice extra special this year by serving up fresh, light food for your family!  Bon Appetit!

Thankful Thursday…….

Merry Meet everyone!  Hope you all are enjoying your Spring so far and that you had a wonderful Beltane celebration. I know I did….Spring, so far has been mostly rainy!  But today we had a gorgeous sunny day!  I am feeling more energetic just seeing it. 

I have seen many bloggers doing the thankful Thursday blogs…so today that is what I am doing.  I do try very hard to live a grateful life…to be appreciative of the small things and the big things that happen in my life.  I start out my day thanking the Goddess for the day..and end thankful for what the day gave me.  It is thru gratefulness that we truly appreciate what is given..if we don’t notice something enough to be thankful for it..then we don’t notice it at all.

First off….I’m grateful for my cats Harley and Jasper.  My cats are the sweetest souls and they calm me and make me very happy.  My cat Harley had to have an emergency surgery last week….which ended up not being necessary. 😦  Due to a kidney problem, it was possible that she wouldnt’ have survived it..but she did and after hiding away for 4 days….the last two she seems more like herself again, moving better and is back on my lap purring and getting her love.  Jasper was worried about her and it was so sweet seeing it…I love my cats!

I am also grateful for the gift of a Sunny day after so many rainy days.  I am appreciative though of what the rain wrought.  Everything is so green and lush and blooming.  It smells wonderful out and seeing Mother Earth back in full swing is just awesome!  After a long winter, I feel more energized and can’t wait to get my gardens planted and be outside more!  My porch is calling me too 🙂

I am grateful for my morning routine of coffee and my facebook friends.  I have THE BEST facebook friends!  I have made some real friendships that I know will last…and you all know who you are 🙂  They make me laugh, cry, think, give of myself, and help me to become a better person.  They also keep me excited and happy in my path.  and they make me proud to be a witch!  I love you guys!

I am grateful for the occasional drives I take with my daughter Kate and my granddaughter Lily. While Lily sleeps….Kate and I have time to be just the two of us.  To really talk and connect and spend time together.  I love that we have those precious hours.

Quick things I’m so thankful for….

-Frogs singing at night when the windows are open

Lastly for today, I am most grateful for being a Nana.  I had nothing but pure joy being a mom and raising my daughters.  Watching them grow into the beautiful young women they have become has been remarkable to me and I’m beyond proud of them and love them so much.  Now I have the added joy of being a grandparent and it is so much fun!  I think because I’m older and Nana, not mom, I can just sit back and watch my Lily grow and learn and develop her own personality.  I find her remarkable, smart, silly and full of life and joy and adorable.  In less then 3 weeks my joy will be doubled..when baby Charlie Matthew gets here..a grandson!  Life as Nana is truly good 🙂  I am blessed.

Take time in your day to be thankful…I have kept a journal for about 15 years and I always try to write a few things I’m grateful for when I do.  No matter how bad the day is…trust me..something good happened too…did you notice it?  At the end of the day, it’s the small things in life that matter the most.  What are you thankful for?
